I would give this place less than zero stars if I could. I went with four people but only two of us wanted to eat but the waitress wouldn't take my order because she said everyone has to order food. I told her they already ate and she said they could leave. She then insulted me by telling me that I was in a restaurant and in Italy all restaurants are like this. I asked for the manager and the waitress refused. She just continued to argue with me and told me if I didnt like it I could leave. It is sad because they get alot of business because of their location but if people only knew how horrible they treat people. They were very arrogant and anti tourist. No respect for the customer. I understand the reason they want all customers to order but they still need to respect the customer. Even after her coworker came over and treated us the same way. I have been to Rome a few times, and this tiny little hole-in-the-wall, that I stumbled on accidentally while on my way to the Capitoline Hill, stands out for its simple, fresh and perfectly executed carbonara, which is for me the quintessential Roman dish.
When I went, my father and I were the only customers, apart from an old man just finishing his lunch when we arrived. We were attended by a single ancient waiter, who, aside from the chef, was apparently the only staff on duty. He was very attentive but not hoveringly so. The interior is nothing memorable, just one narrow, slightly down-at-heels room. But don't be fooled by appearances; the food is incredible. The view across the street to the Capitoline is nice, too.
Bottom line: If you're in the Capitoline area, don't be seduced by the fancier places with tables on the sidewalk and slick-talking waiters. Go straight to Giovagnoli Demetrio and taste...

The food was absolutely delicious, the service flawless, and the atmosphere warm and inviting. It’s a beautifully quaint little place, frequented by locals, which is always a great sign. Every dish we tried was outstanding, and the entire experience felt authentically Roman.
