However, I believe that's how it's supposed to be prepared, so it's more about personal preference.
The stall has a long history, established in 1987, and has moved to a more modern location at Spui 7a to meet the latest standards. They pride themselves on using the freshest ingredients, and the herring is cut daily to ensure the best quality. Besides herring, they offer a variety of other fish, including shrimps, mackerel, salmon, and fried codfish, which might be worth trying if herring isn't your thing.
Recently, they introduced a new box packing, which helps to keep the herring intact for those who want to take it home. This attention to detail in their service is commendable. I have a condition of my large intestine (Diverticular Disease), and in the morning I was having such severe cramping and overall pain emanating from my abdomen. It was almost debilitating, but then I remembered that I had briefly read about a Dutch national dish before my holiday, and that it is meant to be good for the stomach. I usually like fish, so I thought of giving it a go.
WOW!! First of all, it is not even salty! Maybe only very mildly so. It is flavourful, and almost creamy in the mouth as I chewed. But beyond this: my pain was gone! The cramps which were preventing me from enjoying the wonderful city could not be felt, and for the first time in the entire day I felt comfortable enough to actually see more of the city before having to leave for my flight.
I went back for seconds, and the owner was incredibly nice and told me briefly about the history, of the tradition going back hundreds of years. I looked this up afterwards and found it incredibly interesting. I am back in London now and I genuinely miss herring!

It's a simple kiosk from where you can get some pretty straight forward a couple of items menu - freshly salted fish like salmon and herring that could be served in a bun, with pickle and onion, there are also deep fried fish like cod fish, shrimps etc. You can buy also some hot and soft drinks. There is neither alcohol, nor beer in the place. There is a simple approach - simple serving in a napkin or the paper plate but it is extremely popular among the locals and tourists apparently.
