I have no idea where the people who have been giving this place high ratings have been eating (most of these reviews are probably fake) but I have literally NEVER in 40 years of Vietnamese dining encountered ANYTHING like what I just got at this place. If you think you'd be satisfied with Vietnamese food provided by some guy named Carl from Kansas that took a 4 Hour online cooking class this might be the place for you. If you're an experienced diner the first thing you'll notice is the lack of any chili garlic sauce, or fish sauce on the table, and the fish sauce they will bring you has been watered down to essentially water. I got the vermicelli Bowl and the vermicelli aside from being about 40° cold was loaded with clumps of stuck together noodles like biting into blobs of semi-dried Elmer's glue. The spring roll instead of having been placed on top was covered with slices of cucumber that were thus warm and mushy instead of crisp and refreshing) and wet soggy bean sprouts which apparently instead of putting in fresh and crisp they cook to a soft warm mush (never seen that before in 40 years) so that spring roll instead of being crispy and flaky was a soggy log of goo. THE BEEF !! I've literally NEVER seen let alone been served ANYTHING even remotely as PATHETIC in 40 years EVER !! tiny little SCRAPS of quarter inch thick beef LITERALLY EVERY SINGLE ONE OF THEM with a full diameter chopped bone in it (look at one of their own pictures provided and see for yourself the amount of bone they're going to serve you and the only way you're going to get the beef around it is to pick it up with your hands and eat it with your hands) AND since they found the absolute cheapest bone-in beef they could find and then chopped it up into scraps I was treated to two sharp as pins shards of bone fragments in the meat that had I not noticed them would have been a very serious threat to me having a pierced stomach or intestine. This place is an insult to Vietnamese food & the only way I can really truly describe what you should expect here is what you would expect from a rural Idaho Mormon High School home economics class of kids. Had I not eaten all day the moment they brought that out and I saw the INSANELY PATHETIC literal scraps of bone in beef and clumped up wads of vermicelli I would have walked out... I WILL NEVER !!! We had the popcorn chicken, coconut shrimp, beef pho (with brisket and tendon), summer rolls, sauteed corn and broken rice with beef and chicken. The shrimp were delicious, very lightly floured and coated in coconut, then fried. No thick batter. The corn had a wonderful umami shrimpy flavor from the teeny dried shrimp-the portion could have been more generous. The pho broth was just right and piping hot as it should and I was so glad to have tendons, a rarity in Bozeman and possibly Montana. I needed more garnishes and didn't know I could ask for more-next time. The beef in the broken rice was beautiful but a bit tough-sliced across like Korean galbi. The chicken was absurdly delicious, first grilled then tossed in a sweet-savory sauce, everyone at our table loved it. The rice itself was perfectly cooked and lovely even on its own. Well-cooked rice is a rarity and a treat at Pho Saigon. We all shared the coffee flan, delicately flavored and not too sweet, just right after a meat-heavy meal. Challenges: Parking in the area is sparse to non-existent. First time, we parked behind the building in what could only be called a mud bog next to a trash dump. The melting snow in the adjacent field caused the mud.The trashed abandoned school bus, trailer, boat and other trash are not an inviting sight. Neighboring businesses vigorously protect their parking areas with "No Parking" signs. Read moreBeen sitting at our booth for 41 minutes and finally got our appetizer, which was advertised as 4 spring rolls. It came out as 2 spring rolls cut in half. Seriously. And no sign of our entrees in sight. (*Added info - it wasn't very busy in the restaurant, if every table had been filled it may have been a little easier to understand. What I did see was, order after order being taken to the front for delivery service. Which means the kitchen really needs to work on time management for their in-person guests and to-go orders. Multitasking is essential in keeping everyone happy. And when I got my vermicelli entree - the egg rolls were cold, the chicken was cold, I understand it's a cold noodle dish, but the chicken was cooked in advance and just put on the dish. No flash griddle searing before adding to the bowl. And cold egg rolls, that means my food has been sitting for at least 10 minutes in the kitchen before being brought to the table. My hubs had pho, another dish that has many ready prepped items that are assembled in the bowl. The broth is in a large pot. The noodles are cooked. The meat is placed in the bowl with the scorching hot broth and noodles and a few herbs are tossed in. 45 minutes to have those 2 items brought to the table. Very disappointed in the whole meal. Guests should be alerted about the kitchen being overwhelmed at the start to give them the opportunity to choose to wait or patronize a different establishment.
