The good: I ordered the half pound brisket with candied yams. The Brisket was decent. I don't normally like sweetened yams/sweet potatoes, but the sugar was caramelized perfectly. It was good. My friends ordered the chicken wing starter. The chicken was cooked properly and was very good. The bad: The service was the worst. By watching the other waitresses and interacting with them, it seems to have been just ours. It was as if we were bothering her. She walked away in the middle of a question. She ignored my deaf friends request to look at him while she spoke (he can read lips). Tried to take plates away that clearly still had food on them we were actively eating. Didn't ask about the burger my friend clearly didn't like. The chef or owner walked out at one point and asked how we liked our food. I truthfully gave a thumbs up, as I always seemed to get asked that question right after I take a bite. My friend said, "I like the salad." That should be a show stopper at a restaurant about meat. When a customer has one bite out of your burger and compliments the salad..... he just walked away. Now the food/"atmosphere": It was cold in there. I am normally pretty hot blooded but didn't even think to take my coat off because of the chill. The rolls were cold inside and lukewarm on the outside, and the butter was straight out of the fridge cold. I did like the Christmas in your mouth flavor of the butter. My friend took one bite of his burger and asked me to try it. It seemed the fat to meat ratio was way off. The grease coated the roof of my mouth, and it had an off flavor. He said it tasted like cleaner, I thought it was like the bad kind of grease, but probably due to an improperly cleaned grill. This is kind of a service/atmosphere thing. It's a small place so it gets crowded fast. But instead of asking the people who ere standing, waiting for something by the bar, the staff, including our waitress, kept bumping and brushing up against my friend to get by. When I saw the sign on the door that they were open on Sunday "for the holidays" I had a sinking feeling, but hoped they would deliver. They did not. Based on this experience, I would NOT recommend it to anyone. No plans on going back.

10-4-22 update*** As I usually do, I like to revisit places and update my reviews accordingly. I've been to the chop shop on many occasions since the below review and I have to say they have fine tuned things. They have really excelled in friendly service. I love the food but I think with any place that loves to use local ingredients you're going to have a few hiccups here and there due to the challenges that come along with what's local and available. Even so I have to give them a 5 star for that exact reason. The owner is not afraid to be creative and lead the way. Great guy! Keep doing what you guys are doing. I've stopped into the chop shop a time or two before but only for a drink and appetizer. I decided to eat some dinner this time and ordered the brisket. A friend of mine ordered the chicken. Both the brisket and chicken were a little dry. The potato salad with horseradish & mustard was good but overall there wasn't much taste to either plate. The staff were friendly and the service was good but I had hoped for more flavor when it Came to dinner. That being said, I plan on giving the chop shop another try.

The Chop Shop is a great addition to the Indian Creek Plaza in Downtown Caldwell. Adding a needed variety to the growing menus found in the downtown Caldwell area. For my first visit, I came for the Brisket, but ended up sampling their daily special as it was not on the menu and came highly recommended. I was not disappointed. It was a cheesy jalapeño smoked sausage sandwich; smoked Gouda with a smoked jalapeño cheddar sausage, smothered in sautéed onions, peppers, and jalapeños, all on a hardy yet soft bun. If this was a regular on the menu it would be hard to try other items. I ordered the fried okra as the side, and will be getting that again after trying a few more of the other options. I will be returning and adding to this review as the food was great, the atmosphere was inviting, the staff was really friendly and helpful, and I want to continue to support great local businesses.

I hate to give a bad rating, I've heard their food is really good but I had friends take me there for my birthday dinner. They suggested that I try to burnt ends that they really enjoyed them. So all three of us ordered burnt ends and I believe it's around $15 which comes with nothing as a side. When the food came the burnt ends weren't only burnt but they were made like a little charcoal briquette. My friends didn't want to complain. As they had bragged about how good it was and wanted to take me there for my special night. I don't know if they were embarrassed to say anything embarrassed for the cook Maybe embarrassed for the whole establishment Maybe. I didn't want to seem snooty or unhappy with my meal because I knew that they had gone to such efforts too meet with me and take me out to get paid for my dinner that doesn't change the fact that we were served charcoal for cats and the waitress should have realized that the cook should have known the quality of his food and they just handed it to us and walked away. I guess the establishment made $45 off of charcoal briquettes that we couldn't even eat I know myself and my friend boxed ours up her husband ate the majority of his and I thought maybe I was the only one that noticed but the next day when I talked to my girlfriend she said I don't know what was wrong usually it's really good. So they did notice they just didn't want to be rude and say anything. So maybe it's a hit and miss situation but I do feel that the cook and the waitress should have known what they were serving. Sorry Chop Shop but I expect to be serve food that is...

I’m not a huge BBQ guy but this place is awesome! The flavors weren’t overwhelming of BBQ sauce. The flavors of my wife’s Shop Burrito were amazing. So much going on but all the flavors paired amazingly. My Brisket Sandwich and Candied Sweet Potatoes were on point with taste! Portions are spot on although if you’re not a big eater make sure to share the Shop Burrito, it’s huge! We will definitely be back and could even call this one of our favorite places to eat. Our service was awesome and Alissa was very sweet and attentive, keep up the great job Alissa. Thank you all for a great dining experience.

Wow, unfortunately so so disappointed in my visit tonight.. had friends from out of town up for basketball tournament and just finished and headed to the Chop Shop. Walked in at 8:30 and made the mistake of asking if we were ok to have drinks and dinner and was told sorry we’re closing early because sometimes it’s slow. Was a little surprised seeing all the people sitting at the bar. Food is always so good but I’m not sure it’ll get me back because of the poor customer service. As a business owner I love the fact when a business makes good money and if very profitable, but should never be so profitable to turn away paying customers. All I can say is WOW not good at all guys. Good luck with that kind of mind set to be able to pick and choose your customer and when you’d like to serve them.
