Amano ⭐️⭐️⭐️⭐️⭐️ Located in downtown Caldwell, on the site of what used to be a bank (the vault is behind the green curtain), inside a historic building, Amano is one of my favorite new restaurants of 2019. Sal and Becca Alamilla are the owners;Sal is the chef. Their staff are well-trained, informative, personable and gracious. KM and I visited for the first time on 10/11/19. The experience far exceeded our high expectations. Amano is a craft Mexican kitchen. Tortillas are made from organic, heirloom Oaxaca corn that is ground in-house with lava rock. The menu features the local harvest of Idaho, craft cocktails, premium tequilas and Mezcal, handcrafted beer and wine from the Sunnyslope wine region. The made to order guacamole and chips were beautifully presented and perfectly seasoned. We ordered a side of salsa and we were offered mild, medium or hot. KM prefers mild, I prefer hot, so we compromised on medium. The mortar and pestle salsa was fire roasted tomatoes and was unlike any I have had before. It was flavorful and had a heat that builds. KM’s La Flor cocktail, which featured tequila blanco, jamaica simple and lime, was as delicious as it was beautiful. When you purchase a craft cocktail at Amano, you receive a punch card that is a miniature version of the front of the drink menu. Once you have tried all 9 cocktails, you receive your 10th for $1. The Quesadilla de Flor de Calabaza is an organic blue corn tortilla filled with squash blossom, queso oaxaca, cojita, queso fresco,crema and toasted tomatillo sauce. Even without the salsa, it Wes very flavorful. The Esquites (grilled corn with mayonesa, cojita, tajin and cilantro) was the best version of this dish that I have ever had. The L.A. Birria tacos are a house specialty and the item that I was most excited to try, as this is an item that is very hard to find. I have actively sought it out in Idaho, Oregon and Washington, to no avail. I loved this dish so much that it is hard for me to imagine returning to Amano without ordering it every single time. The Baja Cali Fish tacos are beer battered mahi-mahi, topped with habaneros slaw and crema. I appreciate that these tacos are made from high-quality mahi-mahi. Everything about these tacos was on point. These fish tacos were some of the very best I’ve ever had. For those who are heat adverse, I would recommend you consider removing the sliver thin habanera slices before you consume your fish tacos. The refried rice and beans were delicious. Even though the refried beans were not made with lard, they had good flavor. For dessert, we shared an order of Arroz Con Leche (rice pudding) with seasonal fruit compote. The evening we were there, the fruit compote was a mixture of blueberry and raspberry. The portion was generous and the flavors were wonderful. Amano is open for lunch and dinner. They also serve brunch. Chef Alamilla is working on a new Fall menu that I look forward to trying. I intend to eventually try every single item on the menu, always with a side of L.A. Amano “Happy One Hour” is one hour before and one hour after dinner. 702 Main Street and 7th, downtown Caldwell near Indian Creek Amano is located in a previous bank setting. Street parking without meters has come back to the downtown area, there are also parking lots on the Indian Creek Steakhouse side, north of the restaurant and on the south side just over the passenger bridge. The restaurant has received numerous awards and mentions in the press for creative, authentic cooking and this September celebrated its 5-year anniversary. They will be moving to a new spot of their own in 2025 at the Indian Creek Plaza, so it was a pleasant surprise to find the original location will still be open till the end of 2024. I’ve been here only on a couple of occasions; one time was a special event where the chefs and mixologists showed off their talents to other corporate chefs. At that time, the short rib and lavender cake were over the top and still in my memory bank from years ago. A version of the cake is currently on the menu at $16. It’s indulgent, you should experience it. It’s also light, as a friend once described the taste, “It’s like angels dancing on your tongue.” The full menu is also available, but I decided to try the specific tastes not downsized from the regular menu with a refreshing drink called the La paloma cocktail $10. It’s a combination of tequila, lime, agave, cucumber and grapefruit plus grapefruit soda. This is a perfect summer drink, a little sweeter but not syrupy, compared to the traditional margarita. A Taco de papa $5 was my favorite, the taco was a little spicy, the mashed potato so delicate and flavorful. The Taco de Carnitas, $6 left me wanting another one, was very well balanced, the meat extremely tender. The Bean & Cheese Burrito at $10 when it came to flavor and texture was perfect. Beans not mushy, melted cheese just right. Of course the flour and corn tortillas are made in house. The blue corn version I’ve had before with different dishes is outstanding. Just a quick note on the staff. While sitting at the bar, I had one person bring over the silverware, napkin and water, another took the order, the bartender made the drink and food was brought out piping hot by different individuals. You get a sense that each placed the customer first, keeping the flow of food and drink a priority. The setting does not remind you of a bank, look forward to seeing what this family and team does in a new place close by. As a side note, Chef Owner Sal Alamilla, has been nominated for the James Beard Awards in this region, for 2022, 2023 and 2024. This restaurant should be at the top of your list for experiencing the direction downtown Caldwell has been taking as a destination, and the nearby plaza is an attraction for people gathering to have fun together.

AMANO has been on the top of my list for some time now, so I was super excited to finally try! What ultimately encouraged me to drive all the way to Caldwell for a taste was hearing word of them serving LA Birria tacos in a higher-end setting. Damn. Wow. Holy cannoli. YUM! All words I legitimately exclaimed during my experience at AMANO. It's about time Caldwell had a decent eatery. Fantastic service, delightful atmosphere, reasonable prices and out-of-this world dang good food. AMANO is located in the heart of downtown Caldwell. While seating us our lovely hostess informed us that this used to be a bank which I thought was pretty cool. Husband and I began our evening with La Piña (Buchanan's 12 year scotch, pineapple, coconut, chambord, $13.00) and La Flor (tequila blanco, jamaica simple, lime, $11.00), respectively. La Flor was as beautiful as I saw from the pictures. A sip of La Piña took me back to the warm beaches of Cancun. Our chips and salsa ($4.00) arrived moments later. These aren't your typical chips and salsa. The chips are housemade, to order, so they arrived hot and fresh. They are also huge! Not long after we polished those off our entrees came. My husband ordered La Milpa (grilled Mexican summer squash, refried black beans, roasted tomato salsa, charred queso Oaxaca, corn strips, heirloom blue corn tortillas, ($13.25). Man, these were awesome! I've only recently begun trying vegetarian options. While most of the time I'm disappointed, these sent my tastebuds into a frenzy. Highly recommend! And of course, my birria tacos (slow braised beef, queso Oaxaca, salsa cruda, salsa roja, cilantro, onion, lime and consummé) were absolutely fantastic! I can't truly find the right words to describe these mouthwatering tacos. Drenched in the consummé, I enjoyed every single bite. These are larger too, so I had to end up taking one home. It's 8:00 AM and I'm already looking forward to my lunch! The bill came out to be around $58.00, which, IMO, is very reasonable for the amount and quality of food combined with the semi-luxurious atmosphere. I plan on returning with some friends once their menu rotates. I 100% recommend to anyone and ***please remember, this is a local business and we are in trying times. Be patient, be kind, be generous.***

We were on the search for brunch on our way through Idaho after a night camping in Oregon. We estimated our stomachs would be ready to eat by the time we hit Caldwell and the online menu and the positive reviews steered us to Amano. We were so happy they did! As soon as we got out of the car we were met with an explosion of music that poured out of the restaurant and into the street. As we passed through the doors we were met by enthusiastic staff and an exuberant mariachi band that was just TEARING it up. Seriously, they were incredible. It turned out that we had stumbled into their 2nd anniversary party. Alright! We were immediate seated at the bar and were quickly enjoying a tasty horchata. We took some time to peruse the food and extensive drinks menu, finally landing on Chilaquiles Rojos and Huevos Divorciados paired with two cocktails, La Pina and La Sandia. We took in the music as we danced on our seats, checking out how cool the space was (the ceiling is beautiful!). When our drinks arrived they were not only gorgeous to look at but tasted delicious. La Pina in particular is the kind of drink that I could have enjoyed several more of at the beach. Shortly thereafter our food arrived. The plating was enticing and the flavors were fresh and vibrant. I tried to enjoy them as much as I could while I steadily and quickly made my way through the plate. The roasted tomatillo salsa in the Huevos Divorciados was insanely good. Throughout the meal the staff was friendly and attentive. Things were pretty busy given the celebration and the staff apologized a couple times when they thought they weren't being attentive enough but honestly the whole aesthetic was so enjoyable we didn't even notice. Even without the band and the celebration, the food and drinks more than stood on their own. This is the kind of place I wish was down the street from me because I would love to go here all the time. If you're like us and were debating where to eat on your way through town, stop debating and just go to Amano. You will not be disappointed.

You know sometimes how you eat at a place and it’s so delightful that you don’t need to eat everywhere else to declare it the best? That’s AMANO. It’s the best Fine Mexican in Boise. It’s the best fine Mexican in Idaho. There’s a reason its chef was a James Beard finalist. I felt like I was eating at an Enrique Olvera restaurant like Cosme in NYC or Pujol in Mexico City. Really a special place. You’ll pay for it. So don’t go here thinking you’re just grabbing quick delicious cheap tacos. You’ll spend $50 a person easy with no drinks. But it’s worth it and a great place for special occasions or with friends. I hate when people say “it’s all good, you can’t go wrong.” While that’s general true here at Amano, here’s the order for what to get: 1- Carne Asada Tacos - don’t dismiss this. I almost would never consider carne asada at a taco shop like this. There would usually be so much better to get. But that’s how good the carne asada is here. Get it. 2 - Conchinita Pibil Tacos - when they tell you they’re spicy, surprisingly they mean it. The habenero hits you pretty good. 3- Verde Mole Cauliflower - this dish comes with fresh homemade blue maize tortillas and they’re fabulous. The green mole and pistachios together is really fun and full of flavor. 4 - Birria Tacos - I love birria, but I wouldn’t prioritize it here over the tacos above because it’s so easy to find cheap, delicious Birria today. These are great, but aren’t worth $28 when you can get just as good of Birria for 1/2 the price. The guac is divine. Must get with their homemade blue corn chips which are perfectly salted and perfectly crunchy. The corn app was also good, not great, but good especially considering that it isn’t corn season. Finally, the pudding dessert with the gray corn husk pudding was really fun, but a little too sweet. But it has a taste that reminded me of the corn husk meringue at Cosme. Such a shockingly upscale winner of a restaurant in a small, unassuming town. Bravo chef!

Food was fantastic! The flavors are authentic and the presentations were colorful and very pleasing to the eyes. The service and prices however are hard to get past. We came in on a Friday evening and were told it would be another 3 hours to get a seat at a table, but only a 30 minute wait to get a seat at the bar. We said we would be glad to have a seat at the bar and we're added to the waiting list where and we were told they would text us when two seats opened up. 45 minutes later after walking around and looking at all of the beautiful holiday lights in Caldwell, and having still not received a text we walked back into the restaurant and proceeded to continue waiting there. Another 15 minutes later we finally were seated at the bar. Bar staff was friendly while being busy so well done on their part. We had 2 cocktails which were made to order in front of us and were both delicious. We proceeded to have the chips and salsa which were both clearly made in house and were both good, although the chips were a bit hard/thick. We each had an order of tacos, which came as a set of three, I had the fish tacos and my partner the birria tacos. We were warned that the fish tacos were spicy which I enjoy so we agreed. The tacos took 31 minutes to come out but were very delicious. The birria was perfectly crispy and crunchy and full of flavor. Fish tacos were a good balance of heat and flavor, fish was cooked perfectly and the tortillas were wonderful. Overall a very good meal though it took a long time to make it happen between getting a seat and getting the tacos. The next thing I'd like to bring up is the price, for the two of us to have 2 drinks, chips and salsa, and an order of tacos each, plus tip was $108. If you are willing to pay that price and wait that long then I'd recommend it, the food was great, if you aren't willing to wait or pay that price, there are plenty of other great Mexican spots in the area.
