Billy, the SwordMaster of Sushi.
The first course arrived like the opening clash of a grand battle. A single piece of otoro, glistening like morning dew on steel, rested before me. With a simple nod, Billy challenged me to face it head-on. As it met my palate, I felt an explosion of umami so profound it could have felled a lesser warrior. But I pressed on, bolstered by the knowledge that greater battles lay ahead.
With every course, Billy’s mastery became more apparent. Scallops danced with yuzu in a waltz of sweetness and citrus. Uni, as golden as the rising sun, melted with the grace of snow on a mountaintop. The ebi, seared in the flames of glory, arrived crowned with a whisper of smokiness that told a tale of valor. Each dish was a chapter, and each bite a turning point in a story I never wanted to end.
But it wasn’t just the food that elevated this experience to mythic heights. It was Billy himself — the unwavering hero of the night. His eyes scanned the battlefield (the counter), ever watchful of his guests’ needs. He anticipated our every move, laying down his creations with the precision of a grandmaster’s finishing blow. No flourish was wasted, no gesture without intent. “You’re ready for the next one,” his calm gaze seemed to say. And I was.
As the final course arrived — a handroll as sweet as victory’s embrace — I knew that the journey was coming to an end. Billy’s eyes met mine, and for a moment, I saw it: the quiet pride of a warrior who had given it his all. I bowed in respect, for I had not merely eaten sushi. I had witnessed greatness.
This was no ordinary meal. It was a saga. A tale of triumph, precision, and glory. Billy, the SwordMaster of Sushi, had shown me that true mastery comes from heart, spirit, and a blade’s edge of skill. For that, I grant him and his temple of sushi a...
Read more“I love what you’ve done with the place” is a massive understatement. Oh. My. God. I love sushi. I LOVE it. Omakase is a rare treat for me in the capital region. The fact I can walk here is like a beautiful karmic sign that I’ve done something right in my life. The aesthetic is exceptional. Lighting, decor, overall appearance is 10/10. It’s clean. It’s beautiful. And every detail meticulously thought of. I opted for the 16 course, my wife the 13. Billy. My god Billy. Fantastic. What a stud. What I REALLY appreciated here- is that typically (in my experience) Omakase is really about the fish. And traditional. The subtle twists were amazing. The scallop with a whisper of lemon/ lime/ and truffle was a magnificent flavor. Practically melted in my mouth. The Spanish mackerel topped with thinly sliced shishito peppers was such a wonderful morsel. I ordered more (I also had the Masamune sake so if I’m mixing up the fish- forgive me. The sake was fantastic). Dessert was ridiculously good. I can’t say enough. I loved this experience. And proper Omakase IS an experience. Boutta be here all of the time. I’d risk making my rent payments on time if I could eat here daily. If all you eat are California rolls- go outside of your comfort zone and sit at the chef’s counter. You will without a doubt have a fantastic experience....

His sushi has always been very consistent! Fresh, Bright, and FlavorFULL!! We were sad when he left Izumi (which is now turned into Wasabi) When we walked in to Omakase, we had no clue Larry was running the place! It made our night to see him again, but also to know that we have an upscale sushi place to go to now without having to go all the way down to NYC or further! We did not do the Omakase, we sat at one of the lovely tables and ordered a la carte. the unique flavor combinations matched with the unmatched quality of the Toro specifically, Are out of this world. the kumamoto oyster is something special, even my wife who does not like oysters enjoyed it! I'm not kidding when I say, If you find yourself to be in Saratoga and you are looking for sushi or Japanese or great food in general, You will not disappointed and you will NOT find a better find a better combination 0f Sushi Quality and...
