I’m so disappointed in this. It has such potential, and we had been looking forward to trying this out for a while. I love the ambience, the gas fireplace in the middle, the beautiful space. On the hill outside, there’s a fire pit with chairs and hammocks, it’s a lovely area.
The bathrooms are nice but cold and both were out of paper towels.
Breakfast burritos appeared to have been sitting under a warmer for hours and or refrigerated and microwaved and brought to the table. The eggs in mine were hard as a rock and flavorless, the tortilla was dry and cracking around the edges, and the middle of it was soggy. The entire thing was served extremely hot as if it had just come out of the microwave. It had very little flavor, even though there was chorizo and supposedly there was tomatillo salsa inside. The bacon breakfast burrito was fairly tasteless. Also with equally dry tortilla. The bacon was burnt and yet soggy as if it had been sitting and or microwaved. What passed for hashbrowns looked more like soggy pieces of shredded zucchini.
The water was served in glasses and yet the coffee was brought in paper to go cups with plastic lids, which was weird. We were dining in. Drip coffee was mediocre.
Also, the person at the host station should probably participate in restaurant service. The person handling all the to go orders, making espresso orders, and taking dine in orders seemed over committed.
We might return for happy hour at some point since we’re local, but I’ll give it some more time. For $12 a pop for a breakfast burrito I expected a whole lot more than the flavorless and tiny portion we were served.

As someone not staying at the hotel, it was a little confusing and unclear if we needed to wait to be seated or pick our own spot. Since it was seat your own and only maybe 3 people working there (a runner, a server, and a busser), there wasn't much order or structure to when you got served or when you got your food. Tables that sat after us were brought water, food, and bills before we got ours. While waiting to pay for our meal, the server was asking every group to leave a 5 star review and to mention that Hunter and Connor did a great job. Funny how our table was ignored most of the night and did not receive the same request.

We can for dinner and then again for breakfast on a quick weekend and enjoyed each visit. Their housemade salsa and dips are a MUST - seriously, don't even waste your time choosing, just get all four. We devoured every little bit of each. They also have solid tacos (the Bison Carne Asada was a fave) and some really delicious cocktails.
Yes, everything was solid, but if you must choose a meal for Casa Colina, go for breakfast and get their breakfast burritos! It's a nice space to eat-in, but these burritos are perfect to pack for a hike or day of adventuring. So delicious and filling and the perfect size without needing a nap right after.
