lapjack’s Pancake Cabin – A Breakfast Win in the Heart of Gatlinburg
On a hot Sunday morning in Gatlinburg — with temps later hitting 103 degrees — we found ourselves searching for a place to grab breakfast around 9:30 AM. To our surprise, many restaurants and shops were still closed until 10:30 or even noon — which seems crazy during peak summer tourist season.
Thankfully, we spotted Flapjack’s Pancake Cabin on the Parkway and decided to give it a try. While standing in line, a gentleman asked if it was our first time there. When I said yes, he smiled and said, “You’re going to love it.” That was a promising start.
The wait was quoted at 20 minutes, but after giving them my wife’s cell number, we walked next door to browse a shop — and within 10 minutes we got the text that our table was ready. Bonus points for being faster than expected!
Our waitress was new and still learning, but she was honest, polite, and did the right thing by checking on things instead of guessing. Her service was friendly and attentive, and she’s clearly going to be great once she settles into the role.
I ordered scrambled eggs, sausage, and pancakes, and everything was spot-on. The pancakes were fluffy and flavorful, the sausage had that perfect sizzle, and the eggs were cooked just right. It was a classic Southern breakfast done well.

Staff: The staff is outstanding. There is no doubt that, if you have a problem, they will try to fix it with a smile on their face.
Food: The food is where the problem lies in this establishment. I went with a party of four because we did not want to wait an hour for breakfast at 8 am because all the best breakfast spots in town were packed. On entering there were many seats available so we were seated quickly. my party members all decided on skillets and I decided to try their chicken and waffles because our waiter said they were her personal favorite. I can not rate my party's dishes but all of them stated that the food was decent. However, I can not say the same about my dish. The waffle batter used is ok and the waffle was cooked correctly. But the chicken was quite possibly worse than McDonald's chicken nuggets. In fact, imagine a large long chicken nugget processed with way more gristle. The batter for the chicken probably would have tasted better but the chicken was fried at too high of a temperature, leaving burnt edges and a soft soggy middle crust.
Overview: I am rating this a 3 star because this was based on a one-time experience and the dish ordered. If you want good food for the sacrifice of wait time go to any other breakfast spots in the area. If you just want food in a timely manner stick to the skillets...

The host were lacking personalities and when arriving and leaving we said "Thanks so much have a good day" and didn't get a response either time. Service was good, Liberty was nice and attentive until the end. It took us awhile to get our food, the pancakes were wayyy undercooked and I know we weren't the only one with the problem as every table was leaving their pancakes on the table. The sweet tea was horrible tasting, not southern tea, tasted like it was brewed yesterday morning. Our total came out to $46 and some change. We received exactly $52 in change, so the server kept $1 and some change for herself, we still tipped $12 because we're in the industry and just cant bring ourselves to tip badly, but that was definitely wrong of her, and id hope she just cant count rather than doing that intentionally. She forgot our Togo drink so we waited awhile on that as well. The kitchen staff scream the entire time your there, all you here is dishes banging and yelling, it was definitely not a place to enjoy a relaxing breakfast/brunch. The floor was also really dirty.
