At the urging of my favorite epicure, I dined at FUSION café + wine with my wife on Friday. A relatively new addition to Waialae Ave’s constellation of eateries, gm Malie Moran and head chef Rian Lee are soft launching dinner Thursday through Saturday. They offer free 2nd floor parking; entrance just Ewa of the restaurant off Waialae. Ambience is dark, NY chic with a wine bar motif replete with artful wall displays of corks and a striking table centerpiece. I started with a delightful Ancient Peaks Cab while my wife enjoyed the unique Moscato Sunrise, a twin-layered aperitif of amber Moscato and plum Pinot. For our appetizer we savored the grilled octopus with Kamuela tomato, watercress, arugula, and sweet pickled onion. I marveled at the freshness and flavor of the tomatoes and greens. Octopus was fork tender, drizzled in olive oil with a squeeze of fresh lemon. My preference is charred on all sides. For our entrée, my wife loved the fresh pappardelle pasta, handmade right next door at Onda Pasta, with wild (Shimeji?) mushrooms, sauteed with slightly spiced serrano and sour verjus. I enjoyed the balsamic and demi glazed pork ribs, reminiscent of the spice-and-vinegar style of North Carolina. Dessert was a delicious affogato with the most flavorful espresso in recent memory. I also had a dinner for JUMBO SHRIMP LINGUINE: Creamy tomato, toasted breadcrumb. All dishes feature locally made pasta from Onda Pasta in Kaimuki.
