Did I want to wait 2+ hours for an Oyster Bar? No. Did I think that a seafood oriented, bar seating only establishment would be very appealing to me? No. Did I absolutely love every bit of the dining experience here and felt thankful that my friend had insisted on going? ABSOLUTELY.
Oyster Bar is certainly a unique experience, and one I didn't expect to find myself enjoying greatly. I thought "No way!!" when I looked it up and saw how long the waits are here after my friend had told me about wanting to go here. I'm not even an oyster/seafood person!
Nevertheless, we all decided to come here and attempt to brave the line on a late Sunday afternoon, towards the tail end of our weekend trip to Vegas. Am I GLAD we did!!
The line is definitely no joke - I think we waited at least 2 hours, possibly more. There's only bar seating. It is, after all, called Oyster BAR! Inevitably, you end up chatting with some of the other people around you, and we ended up making some friends while in line. When it was finally our turn to be seated, the two girls we had been chatting with got seated next to us at the bar, to our fortune!
Now that the actual dining experience has truly began, they first start you out with some nice warm bread and butter. We also got the oyster shooters, which are shots (choice of vodka or tequila) with oysters in it. They were 3 for $15, perfect for the three of us, and were honestly not that hard to down and even tasted rather well!
Now for the food - the pinnacle of the experience! My partner and I decided to share one of the Palace Pan Roasts. It comes with a lot - shrimp, crab, chicken, and sausage! It was $26.99, which I thought was a pretty good deal considering the popularity of the Oyster Bar and the size of the portions. It more than filled up and satisfied the both of us, with some leftovers to take! And we were definitely both very hungry by that point, having been drinking and at the pool earlier in the day and then waiting for over two hours to be seated! It comes with a side of rice that you can either dip into the pan roast or pour some of the pan roast sauce over the rice, which is what I did. It was the perfect accompaniment and cooked perfectly.
We continued chatting and dining with the girls next to us until we had all finished and it was time to go - we ended up adding them on IG and agreeing to hang again in the future when we're in Vegas again!

Always a long wait – Expect 2+ hours during peak weekend times. Even on a Monday night at 8:50 PM, I waited 100 minutes before getting a seat.
The bar has fewer than 20 seats, so small groups are ideal—you can take turns waiting while others explore the casino or relax.
When it’s your turn, a staff member guides you to the counter, where you can watch the chefs prepare fresh seafood dishes.

Oyster Shooter with Vodka – I tried the single shot version, which was perfectly balanced with lemon juice and sea salt. The triple shot might be too strong for some.
Raw Oysters – Fresh Louisiana oysters, large in size, shucked in front of you. A dozen on the half shell is a popular choice.
Main Dishes
Pan Roast Combo – The signature dish:
A creamy tomato stew loaded with shrimp, crab, and lobster.
Customizable spice level (0-10) – I went with level 3, which had a mild but pleasant kick.
Served with rice, making the rich, flavorful broth even more satisfying. Portion is huge—perfect for sharing!
Cioppino – Another standout, packed with mixed seafood in a savory tomato-based broth.
The Cooking Process
Modern cooking stations allow chefs to prepare three pots at a time.
Watching the process adds to the experience—seafood is sautéed, seasoned, and simmered right before your eyes.

We came to Vegas for a food vacation and after finding and reading about the Oyster Bar online, it was at the top of our list of places to eat. They're open 24 hrs a day and there is typically ALWAYS a line! Pretty crazy.
We showed up on Monday around 10:30-11 AM. and to our surprise, there was only a few people sitting at the bar and no one in line - SCORE! We walked right in and sat down, even the bar tender/server was surprised there wasn't a line. We knew what we wanted before we got there - the Pan Roast. But, we still had to ask what the highlights and recommendations were. He confirmed - "Get the Pan Roast! The combo is the most popular." Done. We ordered the Combo (Lobster, Crab & Shrimp) Pan Roast, some New England Clam Chowder and a dozen oysters.
The New England Chowder came out quick and it was delicious, so full of clams and super tasty. I put a bunch of habanero hot sauce in mine of course and it was perfect.
The daily special oysters were amazing, to soft and tasty! We had 6 of those and 6 of their regular oysters. Didn't like the regular oysters so much.
Finally, our Pan Roast showed up and it looked and smelled incredible. You can order spice levels 1-3 "Amateur", 4-7 "We're Impressed" or 8-10 "We Dare You". We asked and he said if you like Habanero, go with the 10. Boom, perfect we went with 10. And it was perfect! Spicy, delicious and rich with flavor. The lobster was so perfect. My mouth is watering as I talk about it!
10/10 would recommend Palace Station Oyster Bar! We've eaten a lot of places in Vegas and this is one we agreed that we would definitely come back to and eat that Pan Roast again. SOOOOOO GOOOOOOOOD!
