My wife and I were in Manitou Springs to celebrate her birthday and we came across Rocky Mountain Beignets. We’ve heard about them from locals before about this place. Since part of my family is from Louisiana I knew I had to have my wife try a place who dedicates themselves to beignets.
Upon walking into their quaint storefront, you can see their simple menu and order right away. Be prepared to wait 8-10 minutes if you order beignets though. That’s a good thing though and I’ll explain in greater detail.
Some might think 3 Beignets for $6.50 is steep. It’s not and I’ll tell you why. The beignets are made to order which is the key difference. Having multiple different beignet experiences in Louisiana, I can tell you that beignets MUST be made to order and hot in order to experience its full flavor. Once they cool off or are not as warm, it’s a lackluster experience.
These beignets definitely passed the made to order test. Once you bite into the beignet, the outside of your mouth will be coated with powdered sugar as your teeth sink into the warm, light and airy pastry. Truly a different type of pastry, you don’t want this to be too dense/filled with bread. After your first bite you should be able to see through the entire pastry.
The powdered sugar on top did not melt and was able to hold its own on the hot beignet.

Read moreWell let's start with the fact that I am a chef from New Orleans (who now has lived here for a long time) and that I used to sit in Cafe du Monde with coffee and beignets almost daily, so it's not a random tourist review. I like the coffee and loved the beignets! My only small suggestion is to have the ability to eat and drink there comfortably. What I mean is the place is very pretty, the outdoor seating is very cute; I think the owners are underestimating their own importance. We need a place like this and we need to be able to sit there and really enjoy ourselves. I think to accomplish that all we really need are actual cups. The fact that everything is served to go is undercutting how great the place is. It's not just fast food; it's not just grab and go like a coffee drive-thru. It has the potential to be a wonderful relaxing spot with real coffee cups, great coffee, and beignets. The environment, the flavors, the service were all good; all I needed was a real cup for my coffee and I would have been in heaven. Read moreExcellent spot. Always a go to when dropping by Manitou Springs. Small menu but when it comes to beignets, what else do you need other than coffee? There have been times the line is out the door, luckily this go springs our group was able to walk in and place our orders before another rush ensued. There is decent seating inside, though it can get pretty hectic in the winter when it’s not as ideal to sit on their outside deck.
The only nit I have that impacts my review is the price. $6.50 for three beignets is a little pricey. Don’t get me wrong, they are absolutely delicious and made fresh, but that price for some fried dough is a little beyond what you would expect. As well, the coffee is on the same level price wise as Starbucks. However, here they have a machine make it. I feel there are some inconsistencies here for a shop that only serves two made to order items.
