What a delightful discovery this was! My wife and I left a Candlelight Concert nearby looking for something sweet. There was a lot of traffic so I cut down this one street and saw this amazing looking food truck amongst a few others. I pulled into the lot not knowing which one I would goto, but I couldn’t take my eye off Ceviche and Lobster Bars trailer. They also have Crepes and Waffles Bar in the same spot so I felt like this was a perfect choice. Little did I realize I would soon be eating one of the BEST lobster rolls in south Florida! I immediately wanted to get one, so I asked the owner Pau his recommendation. I got a warm lobster roll coated in melted butter with a side of Old Bay mayo and fries. The first bite was insane. The freshness of the lobster and the butter was out of this world. The bread was a perfect compliment to the bite. I didn’t put the old bay mayo until the last bite or two because I tore the sandwich up but those bites were delicious too. I followed it up with a Dulce leche waffle with caramelized bananas topped with a side of whipped cream. It hit the spot and was a nice compliment to everything.
