We popped in to try Brute Sourdough on a whim. We got the P.P.P.P Pizza, as well as the cinnamon bites. The sourdough really makes a difference in crust flavor, the ingredients were fresh and delicious, the balance of it all was excellent. Would highly recommend. The cinnamon bites (made out of the sourdough, which gives them a little bit of a savory twist ) paired with the orange dipping icing were my favorite. Everything was delicious, the staff was delightful, and the tables for two were perfect for grabbing a quick bite to eat. Definitely worth checking out!!

I thought Brute was just okay. I like the idea and unique taste of a sourdough pizza, just seemed like our pizza was rushed a bit (no characteristic char that this type of pizza usually has, and seemed slightly undercooked). I would try it again because I think we just got a dud and the ingredients seemed fresh. There isn't much for seating and the actual spot you order is just in the lobby of a building. They cook the pizzas down the stairs shown in the photo.

Wow! Hidden gem for great pizza in MKE! First time so we weren't sure about the set up. Kitchen is downstairs in the Landmark Bldg. The owner came out and asked if we needed help. He told us to order online and it would be ready in 15 min! We waited upstairs at some of the common area tables. He hand delivered some of the best pizza we have had MKE. Great parmesan bites too! Amazing customer service! We will definitely order again if we are in the area.

Truth be told, this was my favorite new spots when they opened up. My girlfriend and I would get it delivered more than I care to admit. Tonight, we got our oven ready to heat them for the recommended 5 minutes. One pizza slid out of the box with ease and the second was stuck. I tried to assist it underneath just to find that there was a large hole in the center of the pizza with literally no crust. I don’t know how this was even possible to pull out of their oven to get it in a box! There was maybe an inch of crust and 2 inches beyond that had crust underneath with the rest just toppings and cheese melted in the middle. I called to speak to a manager to inform them (not to get anything free), and was told by the person who answered that there was no manager on site and she had only been working for two days at the restaurant. I asked to speak to whoever was in charge and she said nobody was. I asked to speak with someone who has been there longer and she passed the phone off to another young sounding woman. I explained the issue and she said we could complain through the app. I let her know that I wasn’t calling to get anything for free and just wanted to express my disappointment to someone who could make the situation aware to the kitchen. She said “Well, I’m the manager.” I told her that the previous employee said there wasn’t anyone in charge on site, and she responded by telling me that she WASN’T the manager and that the owner would be the one to speak to. I asked when he was available and she said he’s busy in the service industry and they never know when he’ll be in. This was beyond disappointing! The food has been so good that I wanted to ensure that the quality remained as good as it has been by letting someone in charge know just to be blown off and lied to. We won’t be continuing orders with them...

The pizza at brute feels unique, offering a specific vision catered towards small-menu, artisan-style pies. The wild yeast and slow fermentation of the crust lends additional nuance in a way that is pleasant and not overbearing in this application; not quite as sour as, say, a traditional sourdough loaf. There is a nice chew to the crust - it does lean more heavily on Neapolitan-like texture than other, crispier iterations, which may be disappointing for some.

The toppings are considered with care and the PPPP is a great showcase of acidic, vegetal, and tangy peppers alongside savory pepperoni and a generous portion of cheese - so much that the crust is better off folded when eaten. The sauce is cooked and mildly seasoned, which tempers some of the bright acidity found in more traditional, uncooked sauces; again, likely delighting some and disappointing others.

The cinnamon bites are an excellent dessert/appetizer. Although straightforward, the savory quality of the cinnamon-covered dough combined with the bright, vibrant orange dipping-sauce provide a wonderful...

I can genuinely say this is the best pizza I have had in Milwaukee, and definitely competes with (if not beats) the best of pizzas I have had in other areas. The pizzas are made to such a high quality and have flavor combinations that are simply delicious… I feel like a lot of pizza places can get away with making everyday pizzas simply because pizza is good itself haha however, you can tell this pizza has had legitimate thought and care put into the flavor combinations and ingredients used. Absolutely gourmet pizza and for very reasonable pricing.

On another note, the staff is also incredibly kind and the salads are killer too! Haha just as much thought has been put into the side dishes as the main pizzas, another thing that...
