My husband and I were in St Augustine unexpectedly and thought we would try something new for dinner. I was very excited to try Collage based on the reviews I read as we are foodies and love a good dining experience.
When we walked in the restaurant we were met with a hostess and the manager, who looked at us like we had three eyes from what I can only assume was because my husband was finishing a phone call. Upon being seated, the restaurant was freezing, like unbearably cold, and we like it cold. We mentioned the temperature and they did seem to turn the temperature up which we appreciated.
The overall ambiance was great, I love quaint places and told my husband it would be an awesome place to have an anniversary party. Our server, can’t remember her name, was very sweet and tried very hard to give us a great dining experience.
We ordered the soup de jour which was a seafood bisque and split that, delicious! My husband ordered the lobster ravioli and I ordered the filet with Gorgonzola topping. When the food arrived I took a few bites of the steak and broccolini and it was barely warm. I tried to push through and had another bite and the center of my steak was almost cold, another bite of broccolini and that was also cold. I try not to be a complainer but when asked I expressed that my food was not hot. I was offered a new steak or a reheated steak. Since my husband was halfway done I opted for a reheated steak but expressed that I didn’t like the charred Gorgonzola that tasted overwhelmingly like propane, the waitress agreed they use a torch to char it. I admit that I overlooked that they char the Gorgonzola when I ordered it, that’s on me. When I received my reheated steak (Gorgonzola on the side, not charred) I took a few bites and could not get the char flavor out of my mouth and felt it overpowered my steak. It was whatever to me at that point, my husband was done eating and I was not going to order something new.
Here is the turning point for me, the manager comes to the table and asks me how my food was and I told her it was fine to which she curtly replied “what’s wrong with the filet, now?” That is where it went from an acceptable dining experience to poor. The food is just okay at best, perhaps slightly overpriced, and we don’t mind paying, but to pay this much and have someone serve an attitude to me as well?! That coupled with the look we got when we entered the building - just poor management. We usually always have our favorite places that we tend to stick to, but we decided to try something completely different this time. We're always usually a little hesitant to try something new out of fear of disappointment. This place absolutely did NOT disappoint. Everything was incredible from the service to the atmosphere, and especially the food. 6 out of 5 stars!
Our server was Luis. He was super funny from the very beginning. He was very playful, which I personally enjoy, but also very professional and knowledgeable about the menu, which is a huge plus. He offered a lot of amazing recommendations. The service that we received from Luis was unmatched. He absolutely elevated the experience to a whole other level. Luis is an asset to this establishment, and I think he should be training other people on what great service looks like. Luis took so much personal pride in his recommendations that you would have thought he was responsible for preparing the food himself!
I have attached pictures of the food that we enjoyed during our reservation at college. I think it's safe to say collage has skyrocketed to the top of our favorites list and has taken the number one spot!

Read moreI’ve lived in saint Augustine for 6 years and time after time I’ve heard great reviews about this restaurant, I myself work at another upscale restaurant “The old city house inn and restaurant” so over the years I became acquainted with teaching myself, good service, and knowing food quality, I came to the collage with my wife to celebrate her birthday, now we started off with a bottle of wine which I serviced myself I would think that my server would’ve done it for us especially with the restaurant being so small I wouldn’t of thought that it would be an issue, afterwards we had the burrata board for two which was absolutely amazing along with some bread with a garlic bulb that wasn’t seasoned at all and a basil oil, our entrees my wife got the black grouper myself the Asian inspired duck, the food itself had a good taste to it all the flavors matched well although my wife’s entree the Cajun cream sauce had barley any flavor to it and her rice was cold, now my wife is quick introverted and shy so she didn’t want to bring it up until she finished eating but I being myself did, I told my server and my wife over heard the cook when asked by our server (because she went to use the restroom) “are you serving cold rice” and the chef said no why would I do that, instead of being in denial I would’ve thought he would own up to his mistake because my wife had no reason to lie about rice it’s quite small of a restaurant I could even hear it from my table and with is being so small it feels so cramped all in all this place is raved about yet I don’t understand how or why I was expecting a lot more especially working at a 5 star restaurant that has been consistent over the years I would’ve thought that with this place having high reviews that we would have a wonderful experience but sadly we didn’t, thank god we never have to go back.
