I have been eating at Filibertos in phoenix since 1994. I have watched their food go from great to not so good corporate. Then they started allowing franchises. The Sedona Filibertos food is definitely corporate style. While some of the filibertos are privately owned franchises with good recipes their corporate food is bland garbage! Anyone who thinks this is good food does not know what good authentic Mexican food is!
Aside from the food being way overly expensive and bland I could not have felt anymore disliked. The guy at the register behaved as if he did not understand a word of english and answered questions in the most unfriendly manner while behaving as we were not welcome in "HIS" establishment (NOT ONE BIT WELCOMING). When my mom and I were waiting for our food he stared at us as if he hated us (no smile and very unfriendly).
I make mexican food that blows this overrated, overpriced garbage out of the water! My Carne Asada is far superior!
You simply use skirt steak/flap steak and look online for your own marinade recipes which are very simple (generally citrus based) and you can customize to your liking. The trick is to lightly cook the meat "rare" on a very very (hotter the better) grill with some mesquite chips to add flavor then pull it while seared on the outsides and rare on the inside so only a minute or so on each side" (remember meat still cooks after you pull it). Next, let cool then dice it with a "serrated" knife to 3/8" cubes (leaving the fat in the diced meat) and leave it in bowl to refrigerate. Now, when you want tacos/burritos/carne eggs or whatever heat a cast iron frying pan on high heat with 2 tbsp vegetable oil (or lard if you want it really authentic) and pan sear enough meat (don't overcook) for your meal. Dice onions and cilantro to 3/16" cubes (smaller than meat as texture is important) for garnish. A little thinly sliced cabbage makes it even better due to the added texture. Heat 3" round corn tortillas in the same pan with a few drops of vegetable oil. BOOM, excellent carne asada without ungrateful people hating you while charging you ridicules money for generic garbage! Plus your friends will love you when you share:)!
Also, If you want you can add 2 large avocados, some diced cilantro (NO ONIONS), and 1 diced habanero or jalapeno pepper to blender and blend while thinning with whole milk till mildly runny and you have an excellent avocado sauce/chip dip! Once again you have bypassed the unappreciative poorly managed greedy corporation employing ungrateful dirtbags!
AVOID THESE KIND OF EVIL PEOPLE AT ALL COSTS AND DEFINITELY DO NOT SUPPORT THEM BY GIVING THEM YOUR MONEY!
People need to learn to cook their own food! It's easy and better than seeing some dirtbag come out of the toilet stall then right back to the kitchen to cook your food without washing his/her disgusting hands (YES I HAVE WITNESSED THIS MANY MANY TIMES DURING MY LIFETIME)! CORPORATE TRASH DOESN'T CARE UNLESS IT AFFECTS THEIR GREED AND THE STORE MANAGERS ARE TOO UNDERPAID TO CARE!
If you must eat out then support the smaller businesses as they are still hungry to grow.

I’ve had experiences with Filiberto’s in both Sedona and Camp Verde. Neither restaurant seems to outshine the other, however, I’ve had more experiences in Sedona which were negative than positive. The most glaringly negative experience was in April 2022 and needs to be made public to prevent similar behavior being exhibited toward other, unsuspecting customers in the future.
I felt greatly disrespected by both the cook and the store manager (whom the cook called for approval to remake an inedible, $13+ plate of food I purchased the night before as they were closing.) Unable to get through on the phone, I saved my meal and returned the next day. After speaking to the manager on the phone about the situation, I was granted a remake.
Thinking I had been properly taken care of, I tasted the remade meal, approving it for packing. After tasting it, the cook packed it up and sent me on my way. 7 minutes later while at my dinner table I open my meal, mouth watering, eager to begin. Imagine my shock, disappointment and dismay as I looked at my meal only to discover that I was staring at the same, inedible food from the night before. I was duped. The cook had switched the two meals and I was out two evening meals, the cost of the food, my time and my gas driving back and forth across Sedona to fix their mistake.
I’m extremely upset and dissatisfied with the staff at Filibertos’ Sedona location and I can’t help wonder why they opted to ‘fake correct’ the order, make me wait for them to cook it and even allow me to taste it, before sneaking my original, returned food back into my bag.
This type of behavior is unacceptable and I hope this review will be seen by as many of their potential customers as possible.
I’m a human being who deserves respect, consideration and to get what I paid for. So do you. Sadly, Filiberto’s in Sedona has proven to be an epic failure on many fronts.

We asked the lady at the register (who kept going on her phone and then putting it in her back pocket), how many steak tacos you get since the price was listed at $9. She stated “only one small taco nothing with it”. We automatically thought “what the heck, $9 for just ONE taco? Not even 2-3?”. After staring at their menu for 10 minutes just mind blown now at their prices, we decided just to get one container of their spicy carrots. I told her i just wanted one container of their spicy carrots, and she goes “That’s all you’re going to get?” in a rude smirky tone…. not to mention after we paid, we knew they were talking smack about us just getting spicy carrots. just overall rude, and not a good friendly environment.
