This was my first time trying jianbing! I ordered the tofu bing. There was no line, so it only took about 5 minutes for them to prepare my crepe, but everything is cooked to order. If you stand in the right spot you can watch them cook. The jianbing had a very unique texture! The egg-based crepe was almost spongy (but strong enough that you can pick it up and it holds together) and the crunch comes from the fried dough crisps inside. They didn't skimp on the tofu. I ordered mine with the spicy bean paste - it wasn't the same kind of heat as hot sauce or hot peppers, but a deep aromatic spice. Unless you have a serious aversion to anything at all spicy, I don't think their "spicy" will give you issues. You order at a kiosk and give it your phone number so that you get a text when your order is ready. The staff was also nice enough to call out to me when they had mine, and the text arrived at basically the same time that they called. The service is overall quite fast, I went during lunchtime hour and ordered the fish jianbing - the chef let me know right away that it would take a little longer since it was fish. It took about 10 min from ordering to receive my food which isn't long at all imo
