I went to Chuck's for the second time to have steak. The last time was in 2022, and it was a very warm memory with delicious food. So this year, I strongly recommend friends who haven't been here to come again for an experience that will make you regret. We arrived around 9:00 and were glad that the restaurant could accommodate us. As for the food: the dry-aged steak did not have enough time to age properly, so it was basically raw inside. The prime steak was mostly overcooked; we ordered medium, but it was at least medium-well to well-done. The quality of the steak was not an issue, but it seemed like they were either rushing or having a bad day in terms of business. Some slices of the dry-aged steak were only cooked on the outside, while the inside was either rare or medium rare due to the lack of proper aging. The service started off friendly, showing genuine care about where we were from and where we were going. However, if you plan to dine here, be aware that if you tip less than 18% (after tax), don't even bother speaking. We experienced it firsthand when the server, who was friendly moments before asking about our plans for the evening, suddenly turned extremely rude and started humiliating us upon seeing the tip amount. At first, my friend was unsure and tried to talk to her, but she continued to insult us aggressively. I won't go into the details here. Our bill was $366 CAD, and we left a $55 CAD tip. As we walked out of the restaurant, I regretted not skipping the tip altogether. Anyway, for those who want to give it a try, remember that they require a minimum 18% tip after tax, which is $69.1. If you tip below that, there's a risk of being insulted by the same server. On a positive note, the bread was delicious, and last year's experience was wonderful. If you're looking to spend money and be insulted, this is a great choice.
In addition to the points mentioned, there are a few positives: the ambiance at Chuck's in Banff is considered good, with a clean and inviting atmosphere. The appetizers were all well-prepared, and the overall quality of the steaks was satisfactory. Even though the prime steak was overcooked, it was still enjoyable (which is why I didn't complain at the time). However, at this price point, there are many other restaurants in Vancouver, Calgary, and even in the United States that offer great service without humiliating their customers. We were on vacation, and the experience was simply unacceptable. Additionally, it might be beneficial for everyone to learn some knowledge about steaks. Many people mistakenly believe that a medium-rare or rare steak is raw to eat when it may still be undercooked - with a raw, red center, instead of the desired pink. I witnessed a lady earlier who suffered stomach spasms and had to be hospitalized after consuming raw steak at this restaurant. Proper aging of the meat is a crucial aspect of preparing steaks. It was my birthday, and we came here hoping for a special meal. However, what happened ruined our entire evening.
There was a staff member — I’m not sure if she was a busser or a server — who repeatedly ignored us when we tried to get her attention. We called out “Excuse me” at least 7 or 8 times and even raised our hands. She must saw us but completely ignored us every time, keeping her head up and walking past.
Yet when other foreign (non-Asian) customers walked in, she smiled warmly and greeted them with a cheerful “Hi there!” The contrast was obvious and shocking.
We told our server what happened and said we felt discriminated against. She apologized and said she could re-train her, but also brushed it off by saying “she probably ignored you because she’s just bring the food.”
But that doesn’t matter. Whether she’s a busser, a server, or any kind of staff, ignoring us like that while treating other customers kindly is unacceptable. This was clearly racist behavior.
I explained again how hurt we felt, especially since we were spending a lot of money and celebrating a birthday. She said she was sorry but that there was nothing else she could do. She offered to bring the staff member over, but instead brought over someone who appeared to be the manager.
When I explained everything again, the manager just said, “Okay, so where exactly was the racism? She was just doing her job.” He kept repeating, “This has never happened at our restaurant,” and “Racism is a serious issue in Canada, but I don’t think this is racism.”
I told him clearly: I felt it was racism. We called out to her many times, and she ignored us — while being kind to other customers. Even if she wasn’t our server, the professional thing to do would be to either say “I’ll call your server” or at least acknowledge us. Ignoring us completely because of who we are is racism.
After going in circles with the same dismissive responses, I asked for the bill, left no tip, and we left deeply disappointed.
He said he can’t apologize for something they didn’t do wrong just because we wanted to receive one At the end, the manager handed us the bill and had the audacity to say, “Well, happy birthday. Good night.”
It was condescending and insincere.

My son and I were celebrating his 21st birthday, and as he is an avid meat eater, Chuck's offered us both everything we could possibly want for this special occasion.
We ordered the beef and shrimp dumplings, which were REALLY delicious! They set the tone for the rest of the meal. The textures, layering of flavours, and presentation were exceptional. We then had the Hand Picked 14oz sirloin - rare - with the beef ribs, with the potato gratin, broccolini, and mushrooms as side orders. Each individual dish delivered excellent flavours and textures and spoke to the integrity and attention to detail running through the entire experience and ethics of the company.
The online booking was easy to navigate, and the service was exceptional from every member of the team. We were blessed to have Caitlyn as our server for the evening, who was personable, professional, and a joy to converse with, especially about animal welfare, ethics, and health. An absolutely outstanding job, Caitlyn!
The attention to detail from everyone on the evening was superb, and the atmosphere was relaxed and enjoyable, and the spacing of tables was close enough to be cosy without being intrusive.
It's totally understandable why people travel for hours to come to this exceptional restaurant.
