I recently visited a so-called “ramen” restaurant that left much to be desired. Unfortunately, the noodles were subpar, and the broth tasted artificial and lacked the rich, consistency one expects from authentic ramen.
For example, the Tonkotsu broth is made with slow boiling pork bones. It takes 2 days to make should be thick, salty, savory and creamy. The tonkotsu they served was a thin, clear soup and leaves an unpleasant slight bitterness after taste. It was more like an average generic noodle soup.
To add to the disappointment, the prices for the drinks were exorbitant, The service was lackluster as well; waitstaff were inattentive, often chatting among themselves and neglecting customers.
