I live in Lisbon and love to eat at Omakase whenever one opens. So I was truly excited when we booked in July. Ambience- was shocked to see a huge aircon pipe sticking out at the entrance door. The manager said it was a hot day and so they brought in an aircon portable machine. Next- without a smile, he told me to wait “standing”, while a staff cleaned the table and rearrange for the next sitting. I told him that it’s very rude to tell guests to stand and I will sit down and wait . 10 mins later, he just pointed to the area designated for us and told us to sit down. At this point, my partner and I were really unimpressed with both the manager and the other waiter. Food- Chef Shin is possibly the only ethnically Japanese chef in Lisbon now. He was trained in Brazil as are most Brazilian chefs helming Omakases in Lisbon now. Food was fresh and he tried his best to communicate with us in English. Sake - we wanted to try different sakes and asked for recommendations. Was shocked when the manager said he doesn’t know how to serve warm sakes; and instead told us to look into this small fridge and select our own. This isn’t a cafe where you get up and choose your coke/water/beer from the fridge. It was ridiculous. Given the number of Omakases that have opened in Lisbon, Mitsu is very disappointing. A expectativa era que sendo o mais recente Omakase de Lisboa fosse melhor, ou pelo menos diferente, que os já existentes. No fundo, que acrescentasse algo ao panorama da gastronomia japonesa em Lisboa. Acabou por não correr como esperado. Começando pelo bom: a localização é boa e bastante central na cidade, não sendo numa zona excessivamente turística; a decoração do espaço está bem conseguida e elegante (apesar de o ar condicionado portátil destoar um pouco); as cadeiras são bastante confortáveis e o balcão/barra está a uma boa altura; o staff é simpático, atento e prestável; a carta de bebidas é boa. Nota-se que houve investimento. Passando para aquilo que está menos bem e merece ser melhorado. A primeira imagem ao entrar no espaço é de desorganização. Isto porque, contrariamente a todos os outros omakases que conheço, este restaurante não impõe horários rigorosos para o inicio da experiência. Enquanto que nos outros locais é normal haver um turno, por exemplo, às 19.00 -21.00 e outro às 21.00-23.00, o que permite rotação de todos os lugares, o Mitsu faz às 19.00, às 20.00 e às 21.15. Ou seja, quem chega as 20.00 apanha o meio da experiência de quem chegou as 19.00, e quem chega às 21.15 (o nosso caso) apanha o meio de quem chegou às 20.00. Ainda acrescenta os clientes que chegam atrasados. Resultado, estamos a ver cozinhar à nossa frente pratos que não são para nós mas para outros clientes que estão numa fase mais avançada do menu, não há fator surpresa porque vamos vendo o que vai ser servido depois, os chefs estão simultaneamente a fazer entradas, niguiris, sobremesas... uma confusão. Talvez por estarem tão ocupados a fazer diversos pratos ao mesmo tempo, os chefs são pouco conversadores, mesmo na altura de servir falam pouco e muito baixo. Não há a típica explicação do prato para toda a sala (possível quando os clientes estão todos na mesma fase do menu), nem a troca de curiosidades, impressões, nem interação com o cliente. Tudo é muito básico e impessoal. Passando à comida. O menu é bom, há talento nos chefs mas não é de todo nada de extraordinário e fica atrás da maioria dos omakases de Lisboa, incluindo os mais baratos. Para mim, o maki e o sashimi não têm razão de estar no menu, a ordem em que os niguiris são servidos faz pouco sentido. Começa pelos peixes mais gordos com o o-toro e depois vai descendo para outros cortes menos gordos do atum e depois para o peixe branco. Faria muito mais sentido a ordem inversa. Há diversos pratos com ovas de salmão que pelo preço cobrado deveriam claramente ser com caviar. Acho que duas sobremesas também comporiam melhor o menu ao invés de uma só. Em geral o menu é pouco arrojado, não tem sabores inovadores, não se destaca, é mais do mesmo. Na noite em que estive o tão anunciado chef japonês não estava e faltaram alguns pratos que estão nas redes sociais (ex wagyu). Nota de forte elogio ao arroz dos niguiris, que foi dos melhores que já comi, ao prato à base de clara de ovo que gostei bastante (era algo diferente) e à sobremesa (uma espécie de pudim flan) que estava ótima.
