I came for the brisket, but that biscuit slapped me like a buttery freight train of joy. TL;DR: Briscuits in Austin is brisket-breakfast heaven. You order via an app and sink your teeth into a biscuit that might just make you cry. I drove from DFW and would do it again for that brisket + jelly combo. What kind of lunatic wakes up before dawn, skips the Whataburger taquitos, and drives from DFW to Austin just to eat breakfast out of a food truck? This guy. But Briscuits isn’t just a food truck. It’s a biscuit-powered meat temple rolling smoke and dreams in a parking lot next to a coffee shop. I rolled up at 7:40 AM, fueled by road trip grit and caffeine ambition. No line. No chaos. Just one rule: you order through the app, and it goes live at 8:00 AM on the dot. That’s when the magic begins. My tip: place your order before you leave your driveway, and by the time you arrive, your biscuit blessing will be waiting. I went with the brisket and strawberry jelly biscuit, which sounds like something your wild cousin invents after a few bourbons. But this thing, it was divine intervention in sandwich form. The brisket was smoky, tender, and thick-cut like it had something to prove. The jelly was sweet, sticky, and full of berry attitude. And the biscuit? Oh, Lord! The biscuit was a golden, buttery, layered marvel that could hold up a brick wall or, more importantly, brisket slathered in jelly. I took one bite and muttered something like, “Sweet mother of meat, what have I done to deserve this?” I finished it in record time and stared at my empty wrapper like it might refill if I prayed hard enough. But I didn’t forget the home front. I grabbed a second biscuit to take back to my wife, who is both the Queen of Side Dishes and the reigning champion of “Why didn’t you bring me one?” She took one bite and gave me a look that said, “You may proceed with your BBQ road trip, peasant.” Briscuits is the kind of place that reminds you why Texas BBQ isn’t just food, it’s a rite of passage. Conclusion: This was BBQ stop number five on my Texas Monthly Top 50 Tour, and Briscuits came in swinging like it had something to prove. Forty-five joints remain on this meaty mission, and if the rest hit this hard at 8 AM, I may never go back to cereal again. Dad Joke: Why did the biscuit break up with the brisket? Because it couldn’t handle the heat of that smokin’ relationship.

The brisket is so good! It is moist and flavorful.

Pairing the brisket with the strawberry jam, you’ve got perfection. The strawberry jam has a mild smoked flavor with a very thick consistency.

Making a sandwich out of the brisket with the jam sandwiched between biscuits is genius! Absolutely genius right along with the creative name for the place.

Then adding an egg to make it breakfast, that makes for a great morning and perfect start to the day.

Being within Radio, the location is set up for the ability to grab a drink and enjoy the patio. I bring my dogs so it’s a nice set up.

I’ve always had a great interaction with the staff!

Food is ordered online only, and that’s fine for me but…

Ordering online restricts my options for having things tweaked a little bit to have things a little bit differently. I would like at least an option to add egg as a side. But even better I would love there to be a bowl option so I don’t have to piece together a bunch of things. When I want to get creative, I have to pay a steep price for all the add ons. So basically, you should want exactly what they offer or you’ll pay a lot more to customize.

I do wish the biscuits could be a little softer, the sandwiches are stacked pretty tall and I’m actually unable to fit it in my mouth comfortably to bite. Because of this is why I create me a bowl by mixing things I order.

I discovered the gravy to be very thick, the jelly is thick, the biscuits are leaning away from the softer side of the scale so that makes for a very dry meal, this is why a drink from radio is so perfect. If you get the cinnamon roll this is your warning to have a drink on stand by! It was good but I would only order it if I was sharing with a friend. But it has a very interesting smoked flavor that I liked. It was served cold as well so don’t expect the traditional cinnamon roll.

Parking is rough here, but that is just for your information and does not affect my rating for Briscuits.

Aside from my opinion for areas of improvement I recommend this place...

Placed an online order. It was ready a few minutes early and placed out for easy pick up. We got home and opened the bag to breakfast heaven.

First off, these things are big. They're not your out of the can little round biscuit. They're perfectly baked so that they're crunchy on top and fluffy but substantial inside. Now for what we ordered... The brisket, egg and cheese is delicious. Especially with a little of the spiced pear preserves thrown on the bite. The fried chicken honey mustard biscuit is one of the top 3 breakfast items to have ever graced my mouth with it's presence. The hash browns come 2 to an order, were crunchy and not too salty, but definitely benefitted from some of the smoked strawberry jam on top. We got an extra biscuit to spread the jam on for "dessert" and I highly recommend that as well.

All in all, an amazing breakfast. One note of caution: Be aware it's usually insanely hard to park at Radio Coffee where this trailer is located, but it IS totally worth it!

(I was going to take photos but the food looked too good and once we started eating it we couldn't stop, a testament to...
