I'll start by saying that we are not food critics. We may not know about all the terms that go with the food world. But last night, was the greatest experience that we have had to date. Probably the closest feeling to being a critic ourselves.

After searching around google and yelp for what seemed like forever, I had stumbled upon Indaco. After showing my Fiance, we had decided to check it out. I checked open table to see that they were fully booked (after dinner, understanding why), so I then decided to give a call. Ava, the hostess, answers and lets us know that there happens to be two seats located at the 'chef's table'. We happily agreed to reserve those two spots.

Once making it to the restaurant, we were greeted by Ava and brought straight to our seats. Upon arriving, within a few minutes we were greeted by Alex (Buffalo is what they call him), with an excellent greeting and service. He helped us with questions that we had on the Hot Items and some of his personal favorites. He did a fantastic job, and for that we are thankful.

After getting our first round of drinks, we begin by ordering the Bruschetta. Neither I nor my fiance had ever had peaches on bruschetta before, we took a gander and decided to go for it. We were in absolute awe, not only for what we had just taken a bite out of, but also something new. The idea that bruschetta could be done a different way was something that we didn't know that we needed to taste. It was eye opening, honestly. From the list of names we were given at the end, I believe I am to thank Dane. You did an amazing job.

After taking a moment from our first bites of the bruschetta, I look over to the chefs and see Andrew, noticing our reactions to what we had just eaten. I throw up the 'a-okay' sign with my hands and nod happily. He gives a smile back, showing his appreciation for our reactions. We then move on to the next course.

The Sausage Pizza was the next dish we had decided upon. Andrew and Eavie were the ones to prepare this for us. We were able to watch Andrew show off his 'Pizza Throwing' skills, it was truly entertaining. At the same time, Eavie had made sure to check the pizza for the perfect amount of char, checking it every few minutes. Let me tell you, it was exactly what she was going for. Nothing short of perfect. An extraordinary duo, that was able to give use nothing less than the best.

For dish number three, we chose the Campanelle. Alex did not tell us that it was going to be one of the best pasta dishes there was to offer. Rae Rae, my fiance is a very big pasta dish fan, let me say that you have outdone what we have been given in other restaurants. I've never seen my fiance's eyes widen so, from taking a bite from one of her favorite dishes. Thank you for doing such an amazing job Rae Rae.

Then we come to the ending. We didn't believe that we could stomach another bite, but after all of the delicious food, we decided to persevere. Let me say, that was the best choice we could have made. Within a moments notice, Hasta had approached us at the Chef's table. We spoke briefly about her position, and then answered a few questions about our personal preferences in deserts. Quick, to the point, and above all precise, we could see she knew exactly what we were looking for. Within a few minutes, the Torta De Formaggio and Meringata had both made their way out. Without hesitation we dig in.

Starting with the Meringata, there were no words to be spoken. My personal favorite desert that I had ever eaten. For me it is hard to find a restaurant that is able to make a delectable desert as that. Hasta, you did not disappoint. After, was the Torta De Formaggio. It is safe to say that I was able to see my fiance's eyes widen twice from a dish as they did from this dish. The graham crumb being perfectly moist, along with the light whip of the cheesecake being absolutely incredible.

My husband and I came here about a month ago quite by accident -- we had foolishly not reserved a table anywhere but wanted to eat in Charleston on a weekend, so we had walked through about four or five restaurants that told us we would be looking at upwards of a 2 hour wait before we walked in here.

Right away, the atmosphere was incredible. I have never found a place that screams high-end Italian food like Indaco. Everything was clean and the lighting was dimmed so that there was a certain intimate ambience about the place, and the smell was incredible -- you could tell all of the ingredients used were fresh because of how strong the smell was. They said we would probably have to wait a while because it was packed, but at the last second one of the managers came over and got us a spot at this family-style table that looks into the kitchen. My husband and I are huge cooking fans, so seated right in front of the kitchen was the perfect place to be.

In terms of service, we were blown away by how much all of the staff at Indaco helped each other out. There was a good energy in the way that someone who had a hand to spare would run out food for someone, unprompted, who might have had two or three tables up at the pass at the same time. There really was a family vibe with all of the employees that you just couldn't help but feel joyous about. In addition, we were approached by two different managers who wanted to check in and ended up having great conversation with, despite the fact that they were so busy. The professionalism presented in this environment was truly incredible, and you really felt well taken care of.

Now, the food -- WOW! You could not go wrong with a single item on the menu. We ordered the Bianca pizza and the Pappardelle pasta and were nothing short of amazed. Everything was perfectly cooked and the flavor and seasoning were just right. Huge props to all of the chefs back in the kitchen, as we could see they did not stop the whole night and were still executing beautiful dishes.

We had the best meal ever!! The staff, management and chef were absolutely amazing!! Despite a situation that was 100% not on the restaurant at all, they took it upon themselves to really go above and beyond for us in way that they didn’t have to at all. It really shows just how much they care about their customers. We arrived at the restaurant 5 minutes after our reservation time, the hostess was extremely kind and told us the table they had reserved for us still wasn’t open as the couple prior to us had been there for 2 hours and weren’t leaving still. She got us a spot at the bar to grab a drink and appetizer while we waited. She came over to check on us many times and let us know as soon as another table opened, we would be seated. We order drinks and an appetizer, it took 50 minutes after our reservation time to be seated in our original table, but we didn’t mind the wait. They brought over a bowl of the most delicious meatballs I’ve ever had as “compliments of the house” and we also ordered the burrata. Both were amazing! Shortly afterwards, they brought out the prosciutto board “compliments of the chef”. We were blown away by the kindness. It was the best prosciutto we have ever had! We then ordered a pasta and margarita pizza it was all so delicious!! I have no idea how we managed to eat it all just the two of us, but it was all so good we couldn’t help it!! We were even more excited when they told us pastas were made fresh in house. We started with the Focaccia bread served with a ricotta orange burnt honey dip as well as the Polpette Meatballs. While the bread was fine, the ricotta dip was a cold dip which I wasn’t totally expecting and the flavors just didn’t do anything for me. The meatballs on the other hand were very yummy and I could’ve eaten way more of those. I ordered the Hugo Spritzer which was tart, citrusy and minty. It was a nice refreshing drink after wandering around the city all day. My husband got the Black & Blue from the zero proof options and said it was not bad. For dinner I ordered the Campanelle with the 3 mushrooms including pickled mushrooms which sounded very interesting to me. My husband ordered the Triangoli stuffed with blue crab. My 7 year old got the kids pasta (cavatappi) with butter and Parmesan. When the dishes came out, my daughter tasted hers and said it tasted like they didn’t put enough Parmesan cheese. This pretty much summed up our feelings on our pasta dishes as well. While they may be fresh, they generally lacked flavor for all 3 of us. Maybe their pizzas are better but I don’t think I would give a try to any of the pastas again.
