Is this the prettiest mountain town in Colorado? 😍 Crested Butte is one of those places that I want to come back to every summer and fall. This is a very bread-is-the-main-item kind of place, focusing on sourdough. The decor of this space is so quaint, and cozy, living up to the CB-vibe: Old West meets 2024. LOVE the inside, and the bar is beautiful! Even selling fresh loaves of bread at the front of the bar. Phenomenal food, spectacular drinks, and even though they’d been open for only a week, the staff was really making a full effort to nail down the new cocktail list, and new menu. We witnessed firsthand the nuances of being just opened a week, but the staff was really having fun, and working hard to get it right. ZERO complaints! Emma was our point of contact and tho the restaurant was getting busier with reservations as the night went on (we arrived at 5:15 and sat at the bar), she was so warm, welcoming, attentive, conversational, and tho she said it was her first shift of the season, she pretty much crushed it! To start, the salted maple Old Fashioned was my fave and required I order two! My partner had the Chairlift Chats, which was one of the best gin drinks I’ve tried in a quite while! For apps, we both ordered a different “chunk” of sourdough that were both so tasty, just not as sour as I’d hoped. The honey butter was amazing, with a citrus undertone, and the Gruyère special was absolutely delicious! As our main course, we spilt the Pork Rib Chop which was, far and away, without a doing, the best pork chop I’ve ever had. It had been perfectly brined, so it was very salt forward, but the apple puree paired unbelievably well with it. And the roasted maple apples and apple slaw with sauerkraut “dust” were fantastic! Finally, per Emma’s recommendation, we ordered the mini cannolis and a chocolate chip cookie, both of which were super yummy! As we were leaving, Emma gave us one last parting suggestion of a “Brown Health Shot”, which was a ginger/grapefruit juice/simple syrup and bourbon. There’s no way I would have EVER ordered this from a menu (plus, I didn’t see it there ;), but I tried it, again at her offering… probably my new favorite way to mix something with bourbon! Way to make the best of the beginning of the season… well done @BreaderyCB! Well done!! I certainly plan to make them a regular on my rotation moving forward! Management, and the owners should definitely give the staff a huge pat on the back! See you soon!!

We didn't have a reservation, but we had no issue getting a table at 5pm on a weekend in October. I wish they were open for lunch because I usually eat out for lunch rather than dinner, but if I'm in Crested Butte and need dinner again, I will definitely come back.

My husband and I shared: - Whipped Ricotta - Apple Ravioli - High Spirits Flatbread While everything was very good, the apple ravioli was hands down my favorite. We didn't have a reservation, but we had no issue getting a table at 5pm on a weekend in October. The food here is pretty delicious, but don’t come hungry or expectant of either timely or solid service. My 6 friends all received their food in an acceptable time frame from when we ordered, but my flatbread dish took almost 90 mins to get to me. All my friends finished their meals long before I even got mine, and when we asked the waiter, Jonah, for an update after waiting over an hour, he failed to apologize for the wait or even provide an update on the status of my order. He proceeded to respond to my further inquiries with answers like, “it’s coming,” “it’s not personal,” “it’s an experience eating here so it takes a while,” “it’s popping” (whatever that means); and he stated they expect their customers to order 3 courses and my friends just ordered soups and salads, but i ordered pizza, which takes longer (which isn’t true since a friend of mine ordered grilled cheese too). None of those “answers” even came close to an apology for the exorbitant wait and the awkward position both myself and my friends experienced in that they all finished their meals while I sat there hungry. Some of my friends even offered me some of their food because the wait was so ridiculous. Also, how does a flatbread take almost 90 mins to make at a small eatery?

Then, since we weren’t getting anywhere with Jonah, who also refused a request from one of my friends to waive the cost of my meal due to the inconveniences, I decided to talk to the hostess about just getting my meal to-go due to the wait and explained the service I received. She then said, “sorry you’re upset; we’re doing our best.” Again, not a true apology and not helpful.

Next, the manager (and/or owner) of the eatery then came out to talk to us herself since I’m sure she was told that our table wasn’t happy with the service. She thankfully apologized to us, understood our frustrations, made my meal free (overriding Jonah’s previous comment & serious lack of empathy or self-awareness), and offered us free shots. She also explained that they only had 2 ovens, so the flatbreads can take longer to make. We appreciated her telling me that, but emphasized that her staff never warned me of that when ordering so that I could’ve made a more informed decision. (Regardless of that though, waiting almost 90 mins for a flatbread doesn’t make much sense still anyway). I thanked her for her apology and explanation, but told her that her wait staff’s behavior couldn’t have been more opposite from hers.

Lastly, as we were all leaving, Jonah apparently mumbled to 1 of my friends, “you all could use some ice cream.” We were appalled at this condescending, unprofessional comment. I’ve never received such arrogant, aloof, and unapologetic service from any waiter as I did from Jonah, and I’ve been to a wide range of restaurants - the good, the bad, and the ugly. The real tragedy of all this is that the food is good, but due to the abysmal service/wait time, esp from Jonah and the hostess, I will never darken their doorway again. The quality of the service should match the quality of the food when dining out; and sadly, at this logistically challenged restaurant, that doesn’t seem to be a priority. Maybe some ice cream...

The place is small and compact while also serving some great sourdough bread. I pray for Trisha and hope she remains alive for years to come!! It is two stories but fills up quickly and can get loud quickly. Reservations strongly suggested. Bread of the day tends to run out depending on the customer. We asked for it; told it wasn't available; person(s) next to us came in later; they had it amazingly available. During the chaos that is dinner time was seated prior to a couple that recieved service well before we did, that includes drinks food and apps and no they also did not have reservation and we're also sitting at the bar. It did take over a hour to get in , and eat a portion of our meal to take it home(flatbread/ pizza). Note on the menu it does state food can take some time, but don't lie about availability and then serve it right next to us. Again great sourdough but really need to work on making your "rush" more efficient if you can really call it that considering your hours are late; meaning you should be prepared and able to react to a dinner rush.

Note: the bar is normally provided for persons that did not reserve and the two guys that came in later also ordered and did not have preorders . They seemed to know the staff at the bar which I assume allowed for the preferential treatment. Either way really messed up and we were tempted to.leave only by this time it was 8:30pm meaning most other restaurants were already closing in the town. So had no choice but to wait and watch as someone else got the...
