Over-the-Top, On-Point, and Worth Every Bite
I’m honestly surprised to see some of the lower reviews — Papi Steak is exactly what you'd expect, and more. Extravagant? Absolutely. Elegant? Without a doubt. Over the top? 100%, and that’s the whole point.
Where else are you getting a $1000 Australian Wagyu Tomahawk delivered in a briefcase (“The Beef Case”), or a $1000 Baked Alaska with Louis XIII? If you're walking into this place expecting quiet minimalism and a modest bill, you’re in the wrong restaurant.
🔥 The Food
Let’s get right into it — the food was fantastic overall.
Caesar Salad: Hands down the best I’ve ever had. The baked parmesan crisp (frico) had a subtle kick that elevated the dish. If you're on the fence about salad, order this.
Wagyu Pastrami: Incredibly tender, rich, and flavorful — it melts in your mouth. That said, I’d likely skip it next time. Great once, but not a repeat dish for me.
Otoro Sashimi with Golden Osetra Caviar: A decadent dish, but the caviar definitely drove up the price and the otoro was sliced very thin. It was good, but lacked the punch you’d expect for the price tag.
12oz American Wagyu Rib Cap: Perfection. Cooked medium rare, buttery and tender. This was the MVP of the meats.
32oz MS 9+ Australian Wagyu Porterhouse: Also medium rare, but came undercooked in areas, particularly near the NY strip side, which made parts of it hard to chew due to thick fat and tendon. The filet side was noticeably better. Still good, but a bit inconsistent.
Pro tip: Ask for a side of coarse sea salt. While they season well, a bit of extra finishing salt brings out the flavors even more.
Brussels Sprouts: Delicious. We had the bacon on the side and they were still rich, crispy, and packed with flavor — a perfect pairing with the meats.

A bit of a mixed bag here.
Ricotta Cheesecake with Amaretto Cherries: Underwhelming and forgettable.
Strawberries & Cream Crème Brûlée with Strawberry Caviar: Now this was a hit — flavorful, unique, and visually beautiful.
🎶 Vibe & Atmosphere
I loved the atmosphere — even as someone who's not typically into the club scene. The DJ was phenomenal, bringing energy to the room without being overwhelming. Music wasn't annoyingly loud, so you could still keep a conversation without having a sore throat the next day!
We saw 4–5 Beef Cases come out during the night, and each time the lights dimmed, the music swelled, and a full show began. It was fun to watch — if you’re going with a group (6+), this experience is definitely worth it for the show and the Instagram-worthy moment alone.
👏 Service
Our server was exceptional — knowledgeable, warm, and helpful with the menu. Even the bussing staff were personable, checking in often and offering helpful suggestions on dishes and drinks. Top-tier service across the board.
🚻 Only Complaint
Only two single-stall washrooms, which means you may need to wait, especially on a packed night. Minor inconvenience, but worth noting.

Was seated quickly by an amazingly friendly and beautiful young lady from Mexico with the warmest smile. Great start!! My waiter was Georges (I hope I'm right). He was extremely helpful and very pleasant and attentive. As per usual, I am a single diner, so atmosphere and service is VERY important to me. Papi Steak did not fail. Ordered a cocktail, the whisky sour which I must admit was rather blah, the least of all great dinner!! Drinks are expensive, as it the food. Question is, is it good. Answer, def!! Started with the chilled prawns $36 for 4 prawns, served with both the cocktail and remoulade sauce. Served beautifully on a bowl of crushed ice, and they were excellent. Preparation and delivery very well done. A tad behind Anthony's at the M's, but not by much. They were a good size, meaty, very tasty and the sauces, especially the cocktail, nice. My main was the 6 oz American Wagyu filet done medium at $105 and the roasted Brussels' Sprouts which were $21.00. Before dinner arrived, the show went off as 2 table ordered their famous $1000 44oz Tomahawk and the show went on. It's fun to watch, yup, a bit over the top for sure, but this is like a dining/entertainment value, so you get the best of both Worlds. I actually loved it. Meal arrived in decent time, not rushed, which I liked, I could enjoy the abidance, and since it wasn't crowded, the noise levels were not obtrusive. Food arrived, and it looked fantastic. The steak was perfectly booked to medium with a nice pink center, and def tender and juicy. I went right to the sprouts though, as I had waited for those forever. Spectacular, a bit of chili's added onto the top, roasted perfectly with an amazing sweet and tart glaze, they were absolutely great!! Then came the steak and it was very good. I had never eaten Wagyu before, and don't pretend to be a beef expert, but it was certainly flavorful and tender. Finished every bit. No room for dessert for me tonight. Bill totally to close to $200, just for myself, but the 20% tip for Georges, so def an expensive meal. Not something to do every day, but on a yearly visit, YES!! I can see myself returning. Billed to the room as you get points for everything you buy at Fountainbleau, so keep this in mind. I was very pleased with every aspect of this. It's elegant, but not too stuffy, rather fun, with the show, and the food, def worth the visit. Maybe a different drink choice next time, but not everything is perfect. This came close. Thanks to George my waiter, all of the other staff who kept the table cleaned during every part of the meal, (also while refilling water constantly) and the hostess for being so sweet and starting the night out perfectly. FUN! The “purge” siren and lights everytime someone orders a papi steak is hilarious and entertaining. The excitement of the crew when they carry out that gold box and glitter sparklers is insane entertainment.
You will wait. You will wait until your reservation time to be let into the red roped off area. You will wait at the bar if. A seat is available - and standing in lobby or near bar if not. You will wait at your table. Order starters, the steak will take a while. Our reservations were for 8. We left as soon as entree and dessert was done - this was past 11 pm.
Your steak may not be cooked as requested 😬
Guest services / concierge was very adaptable in moving our reservation from 7 pm to 8 pm and accommodating an extra guest. This was seamless.
We ordered a medium rare steak to table share. It was delayed by an hour. When it came out it was medium to medium-well. Wait again.
Guests from NYC are all about restaurants, food and timely reservations. They were a bit disappointed - especially as they were heading to Miami the following day.
Overall, these things can be overlooked by the acknowledgment of our server and upper management who apologized and corrected it.
However, by the time we were done waiting and eating we decided to skip LIV and John summit. It was already past 11 pm for an 8 pm reservation.
Overall, I would definitely go back again. It is a beautiful, comfortable, upscale dining experience with excellent fun and entertainment.
My friends from NYC were disappointed clearly as they stated they will not be returning and regret leaving their reservations at carbone NY to give this a try :( did not help that an upper manager stated he would take care of the steak - not that we requested that - due to the many issues of waiting and getting our main entree incorrect only to wait again. The steak and everything else remained in the bill despite the main manager offering to handle it - we paid it in full and tipped on full amount regardless. It still left a bad taste in our mouths.
Food flavor-wise could have definitely been improved on the steak. It was not juicy nor flavorful - I would have expected to have some sort of marinade. The dipping sauces helped, but not the same as a well-prepared steak for flavor throughout. Perhaps Don’s is a better option for those factors than here.
I loved the crème brûlée - wish I could have taken the tin home.
