Apollo is a nice addition to the neighborhood. I much prefer this bagel over the nearby Murray’s Bagels, though the wait is much longer, even during times that seem “off-peak”. I arrived on Tuesday at 9:45am, ordered at 9:55, and received my food at 10:05 (20 minutes total). The bagel was very good, but too toasted for my taste. Toasting is the default-option, so next time I will explicitly ask for an untoasted bagel, which is my preference. The interior was deliciously chewy, contrasting with the crispy exterior (though the crispiness could be dialed down for me). They are good at spreading the butter and/or cream cheese. This may sound silly, but at other places it simply gets slapped on unevenly. The sourdough flavor added a nice dimension to the plain bagel with butter. I heard that some people do not notice it. My guess is that the flavor gets masked by the cream cheese and the accoutrements (smoked salmon, capers, tomatoes etc.) Their operation is impressive. You can see them hand-poking holes in the dough and boiling the bagels in small batches up front. I’ll re-update here once I try an untoasted bagel! Apollo will likely reign as my favorite bagel in the West Village area, but my overall bagel winner will still go to Absolute Bagels up in Harlem.

I love that the bagel was toasted, but I didn’t like how hard it was to bite into especially the sesame one, which was a bit too chewy for my liking. I’m not sure if I could’ve requested it to be just warmed instead of toasted. Early risers won’t have an issue with waiting, but by midday on weekends, there’s a long, snaking line in front of the store. Luckily, it moved pretty quickly when we were there. There’s very limited seating inside, so we took our bagels to Hudson River Park and enjoyed the view with our bagels. The staff were helpful, and overall, it’s definitely worth a try. Fairly priced, I’d say

PLEASE GET OFF THE LINE AND GET TO POP-UP BAGEL IMMEDIATELY!

This place has three types of bagels, there wasn't really a line, and i still somehow waited 30+min to get to the front of the line for them to tell me they dont have any everything bagels. Literally you can only get 3 types of bagels. Then when I leave I ask the guy who is helping control the line, I said hey do you know you no longer have any everything bagels? He said he had no clue, and was like i only heard from you, I also asked him if they'd have anymore for the day, again he had no idea.

I go home, and I eat the bagel, my jaw is sore as I am typing this review as the seasame bagel was like a rock, I will say the plain bagel was softer, but the combo of waiting in a "short line" for 30+min, to get to front of line for them not to have any everything bagels, and for the guy controlling the line to not have any clue, and then to actually eat the bagels and them not be 1/10 as good as Pop-up, i am dumbfounded what the hype is for this place.

If you go to Pop-Up Bagel and see how it is run, and how quick the line is, and how well-informed the staff is vs Apollo, its the equivalent of an Pro NFL Team vs a bunch fo Sixth Graders playing a scrimmage.

I really hope this place increases their efficiency, otherwise this place will def not last. There was about 4 members of the staff just hanging out showing each other pics and just kinda like shooting the sh*t, it just looked like it was run by a bunch of people in their late...

The reason there's a line outside for these bagels is because there's a line for these bagels. It's definitely NOT for the bagels, service or price. The bagels are hard and crunchy, not at all chewy like you look for in a good NY bagel. They have limited variety- Plain, Sesame and Everything. That's it. No Cinnamon Raisin or Salted?!?!

They are also inflexible about how they will prepare your bagel. My friend wanted a toasted scooped out bagel with light butter on one side and light cream cheese on the other. Nope. Wouldn't scoop or accommodate the smear choice. Had to pick one or the other. After I ordered, I waited 20 minutes and watched people that ordered after me get their food . I only ordered two bagels with smear. That's it. No reason why mine should have taken longer than anyone else's. When I asked about it to the girl at the counter, they hadn't even started mine. And the bagels cost about 20% more than the deli/grill a few doors down. Save your time and $ and skip Apollo and just go to the deli (more variety and they will make it however you want faster and for less money). I do not recommend Apollo.
