I would call this place all you can eat in terms of the pig 🐷. Huge fan on organs and collagens and I definitely wouldn’t miss out a chance to try this place with a friend who also has a huge crash on organs and fat.
Ordered 12 tacos with almost everything except for the uterus (not in stock today) and the pork belly (caused we ordered fried belly).
The braising liquid is the same so you are basically eating the different textures of each part of the pig.
My Ranking for tasting most fatty and gelatinous to most lean and dry:
Papada (7 jowl) Rabo (6 tail) Trompa (2 snout) (with a bit pig taint) Cuero (8 pig skin) = Oreja (9 pig ear) (more texture with bone) Buche (1 stomach) (more bouncy) = Cachete (10 cheek) Costilla (3 ribs) (bit cartilage , still soft) = Chamorro (4 shank) (bit tendon, still soft) Carnudo (12 fried pork belly) (crunchy but fatty) Lengue (11 tongue) Maciza (5 butt) (who knows butt can be so lean and tough?)
My favorites are Rabo (tail), Cachete (cheek), and Lengue (tongue).
I numbered the tacos so you can pair the parts with each taco on the numbered family picture. Have fun trying if you need up doing it.
They have a self-serving topping section, and I really liked the lime and the red sauce. Also. Great selection of drinks, real coke etc.
The cactus salad is super refreshing with tomato, onion, cilantro, fava beans, and Serrano. The cactus has a bit bouncy texture reminiscent of an aloe to me. I used this as topping instead.
And kudos to the fried brain. The crunchy outer shell didn’t diminish any of that robust flavor of the tofu-textured mushy brain. My friend keeps wanting to get seconds.
They call/shout your name when your food is ready, which can happen super fast. Seating is a bit limited, but people eat fast, plus they have a nice extension in the back for extra. Restroom situation is slow sometimes.

Read moreThere are a couple places in NYC that have Mexico City level taco, and this is one of them. OMG Run dont wait, if you like tacos, you have to go immediately. It's really that good. There's also a Ramirez in Williamsburg, also good with a different menu. This place offers a different meats from the pig for theit tacos. I recommend to check their website first to see the explanation first, it will make the ordering easier. I personally like to have a bit of fat and skin mixed with the meat, but you might not like it, so do a quick check. I personally really like the tongue, cheek, and chicharron, but honestly all the meats just melt in mouth. The freshly made tortilla on site is one of the best I have ever had. The taco of soft yet doesnt break apart when I took bites of the taco, did their job holding the meats together. On the side of the restaurant, you'll find a row of toppings for the tacos. This is how the taco restaurants are in Mexico. The re are green and red salsas, they are refreshing and tasty with a mild or medium sting. I like to make sure to get some avocado chunks from the green salsa for the leaner meats. The pickles red onion is crunchy and so juicy. There's also a bowl of marinated carrots with pickled jalapenos, I really lived this too. A bite of the taco, and a bit of the sour jalapeño, heaven. We tried the cactus salad, surprisingly really good and perfect with the tacos. Lightly sour from the cactus, the cactus pieces are mixed with cilantrol, fava beans, white onions. I recommend it. There are some front room bar and along window sill sittings, and a back room seating with tables and chairs. The restaurant isn't big, but the food comes out fast and people dont linger that long. Lastly I really appreciated the hand washing basin close to the exit of the restaurant. You'll find a giant pink soap in the sink that will wash away all the meat juicy from your hands, leaving just the savory flavors in your mouth...

Carnitas Ramirez is a counter service taqueria: order and pick-up at the counter. there's no table service. it's first come, first served. no reservations.
ordered 3 tacos. took about 5-10 minutes for my order to get called. my trio was 1) a lenga (tongue) topped with chicharron crumbles; 2) cachete (jowl); and 3) barriga (pork belly)--all of them come dressed with onions and cilantro. there's a small variety of add-ons like salsa roja, salsa verde, and variety of pickled vegetables like onions and such. take advantage of the salsas and pickled veggies...as the tacos would be pretty bare without them both visually and taste-wise.
the lenga (tongue) is sliced into thin strips and are very tender. added chicharron crumbles to it for more texture and fatty flavor. throw in the pickled veggies and the salsa roja for flavor. cachete (pig cheeks) is tasty. nice juicy chewy soft meat that soaks up the salsa verde and really makes a savory taco. the barriga (pork belly) is pork belly and the fattiness of the pork belly is satisfying in the corn tortilla.
if you're looking to make a meal of tacos--you'll need ~5 as they are on the smaller side. to me, Carnitas Ramirez is perfect for a quick bite of 1-2 tacos on a sleepy day or evening.
