If you stay here and dine, you will have a Michelin-starred taste experience at the price of a simple meal. I prefer to call it a "culinary laboratory" rather than a coffee shop. The owner says "I LIKE IT, SO I MADE IT". The love for food, rather than pure business and profit, is the fundamental reason for the existence of this restaurant. All the dishes on the menu are the bold experiments of the owner with a mixed background of Asian and American culture in the kitchen. To be honest, my bias against coffee shops that offer simple meals almost made me miss this experience. As someone who likes to try new things, I have long been tired of the cliché American breakfast, so when I saw familiar words and pictures of Toast, Sandwich, and Eggs Benedict on the menu, I shallowly thought that this was just a regular coffee shop with beautiful decoration and no creativity. I was ready to leave after having a cup of coffee. However, the strong feeling of hunger forced me to "order some food to fill my stomach casually". So my boyfriend and I ordered two Mushroom Toasts and a Quinoa Scrambled Bowl. When I was ready to welcome the classic and boring combination of creamy sautéed mushrooms and toasted bread, a sauce combination that I had never experienced before took my taste buds to a whole new world: the fusion of Asian and Western flavors was wonderful, and the fusion of different regional seasonings was so harmonious that it was difficult to classify it as a certain cuisine. The salad bowl that appeared in this restaurant was no longer just a presence for "getting some greens to balance the diet". The flavor of the scrambled eggs paired inside was not something that ordinary butter and cream could provide, and the cold dishes also far exceeded my expectations. This was not the taste impact that could be brought about by using cheap but heavy taste seasoning casually. Because we were so shocked by the delicious lunch, we continued to try the Craffle with ice cream, where the salty cheese crumbles neutralized the sweetness.

Thankfully, the croffle topped with grated gjetost cheese and a scoop of creamy vanilla ice cream was a delightful mix of sweet and salty. Gjetost is a Norwegian cheese known for its caramel-like flavor and slightly sweet taste. The gjetost added a unique, rich depth that paired perfectly with the cool, smooth ice cream.
