Review: Cupbop – Downtown Salt Lake City
While traveling through Salt Lake City, my girlfriend and I decided to try Cupbop downtown, a popular chain known for its Korean BBQ bowls. We both ordered the same dish—intended to be a reliable, satisfying stop during our trip from the Pacific Northwest. Unfortunately, our experience was wildly inconsistent and left a lot to be desired.
My bowl, featuring steak bites, was well-executed: tender meat, flavorful sauce, and a decent balance of textures. However, my girlfriend’s bowl, despite being the exact same order, looked and tasted like an entirely different meal.
Instead of steak bites, her bowl came with what appeared to be ground beef patties broken up—a far cry from what was advertised. To make matters worse, her bowl was missing the signature sauce altogether. The noodles were coated in something that tasted like a mayo-butter mix, reminiscent of coleslaw dressing, and it was frankly unappetizing.
It’s baffling how two identical orders could be prepared with such inconsistency. This isn’t just a matter of preference—it’s a basic execution issue that ruined our trust in the brand.

Read moreThe tofu is entirely tasteless. They don't even try to season it and rely entirely on sauce. At least half of the pieces weren't cut all the way through so aren't cooked all the way. Since they're relying on sauce, the decreased surface area makes most of the bites of tofu pretty gross. There is absolutely no quality control on it obviously, probably no one in the store has even tasted it or they would make it better because it's the worst tofu I've ordered from a restaurant.
No veggie mandoo? Seriously?
Staff kind of ignores you and it isn't a very friendly experience. They have a bunch of computer ordering screens now (after COVID lockdowns are done with? Why didn't you do this before?) These ordering screens to me just seem like a way for the staff to not have to talk to you. No one greets you or says thank you.
The music is pretty loud in the store so everyone talks louder and you can't hear the person sitting next to you. I didn't like the type of music either but I guess some people do, it's not my thing. Which makes it really annoying that it's so loud.
