These are what breakfast tacos are supposed to be. You can tell they care, they even label each taco so you can distribute them without opening up everyone else's to find your own. Big ups!
Since I live a couple houses down the street, I am a regular at Con Huevos, so much so, they know my name and instantly hand me my order when I walk up.
I have been here a bit more than a cardiologist would probably prefer and have tried almost everything on the menu.
Aguas Frescas: Always fantastic, and they change daily -- stand outs for me are their strawberry and regular horchatas. It feels like I've won the lottery when they hand me either of these drinks.
About the tacos: The chorizo isn't overly greasy and is well balanced and full of flavor. The rojo and verde chiliquiles are outstanding; truly things of legend. You can't go wrong with any of the specialty tacos and with the ability to add any ingredients to them, you'll be able to hone in on your perfect taco order. A standout to me is "The Lupe", which has proven that vegetarian breakfast tacos can be as delicious as a carne guisada and cheese. Try throwing a piece of bacon on it if you want to be a rebel. The only mediocre taco I've had and avoid (and I've had them all) is the eggs a la mexicana, it's just sort of bland.
About the not-tacos: The hurache, the quesadillas, the flautas are all a full on treat and shouldn't be neglected. Step outside of your box every once in awhile and try something a little different, you won't be disappointed here.
The fideo: If you're not ordering fideo with your Con Huevos order, then I have news for you: you are doing it all wrong. After a night of drinking, their fideo is like the mana that god gave to the Hebrew people in the desert. It's life giving stuff and is said to give you supernatural abilities when not hungover, so add it to every order no matter the situation.
The salsas: Don't get me wrong all the salsas are delicious, but why are they giving us anything other than that spicy orange nectar that is their habenero salsa? It always puzzles me and I feel bad about rarely ever eating the other ones.
I love this place. Don't get me wrong, if you're looking for big red and barbacoa, this isn't it. There are so many fantastic SA-tex-mex breakfast taco spots where you can get those familiar flavors from; but this aint it
With so many of these types of taco shops in SA essentially serving the same thing with the same flavors, Con Huevos is a lighthouse on top of the hill of the homogenized (and still delicious) SA taco scene. It's name says it all, in a sea of indistinguishable taco places, it took "Huevos" to open a place that's different. That's why it's worth your time. You deserve it.

The menu contains what could be construed as breakfast tacos, all breakfast tacos and nothing but breakfast tacos so help me masa. That does not mean that breakfast is not perfectly acceptable any time of day of course. There are a few soups and drinks as well. Don't let the crossword puzzle names of the tacos confuse you. Just read the ingredients contained in each one. And the heart of the matter, the flour tortilla, is Sonoran style. Made with sufficient lard content to give the regular sized rounders their look of translucidity. Many may applaud this type of tortilla with a downpour of accolades including the "a" word. Just my preference, but I am partial to the less thin, more fluffy opaque variety.
The 4 tacos we had came to a bit over $12. Don't be too alarmed that you may find the tariff for these east side tacos somewhat higher than taquerias on the 180 and 270 degree points of the SA compass. They come well filled. My Vicki, which was the bean and cheese w/ crispy bacon was as expected with the exception of the psoriatic flaking of large crispy chips of one tortilla edge. The Licha was filling, but I found no flavor of chorizo and the pappas were not my momma's in that another 5 minutes of cooking would have done them proud. The Elida was carne G with beans and cheese. I liked it, but it had my wife yearning for more gravy, the gravy hound that she is.
They have a ranchero sauce for one of the tacos, but I tried the jellyfied (it was cold) habanero and the milder green. I enjoyed the flavor and heat of each.
Should you order a half dozen or so there will be no need for impressions of the Great Carnac or a concerted aluminum disrobing effort to figure out which taco is which. All are nicely color coded and labeled (someone had some office training).

We made a quick trip to San Antonio, and of course wanted breakfast tacos for breakfast on Saturday. I searched a few minutes and found Con Huevos Tacos near us.
It was a chilly (for San Antonio) morning and there were several cars in the lot with customers waiting for their order, but there was nobody sitting outside or in line. The signs made it clear that this isn't typical. There are clearly marked locations for ordering and picking up orders.
Orders are taken at the window and they text you to let you know when your order is ready. There is plenty of outside seating which is usually great for San Antonio's weather. We would have sat outside if our AirBnB wasn't two minutes away.
The food, though, wow! On Saturday, my husband ordered two Carmen tacos, one with a corn tortilla, one with flour, and rojo (red) sauce. I ordered a chilaquiles bowl with verde (green) sauce, with an added fried egg and avocado (note: not sliced, more like guacamole).
The pickled onions in my bowl made my taste buds sing. The warm verde sauce was deliciously flavorful. The house-made tostadas, well, we bought a bag this morning (Sunday) to bring home. My husband declared his tacos the best breakfast tacos he'd ever had. We used to live in Austin, so this is high praise.
We returned this morning before we left town. I had the chilaquiles taco and hubby had the Carmen and Irma, both on flour. We brought 20 flour tortillas, several sides of refried beans, and a bag of tostadas home with us. We know the tacos we make with them will not stand up to the ones we ate this weekend, but they will be elevated.
