I think a Banh mi is only good when 5 things happen.
Crunchy but fluffy Paté is delicious Mayo is delicious Good pickles & crunchy cucumber Fresh Herbs
Madam’s Banh Mi is definately crunchy, but since we had the mixed one it was packed with all. i’d definately recommended not to be greedy and pick the one type. Because you won’t be able to distinguish between the meat’s. Also the taste of The Paté didn’t shine trough, didn’t felt any creaminess or fatiness from the mayo… nor did the pickles help to balance the taste with the tanginess and sweetness nor did i taste any coriander/cilantro.. the banh mi was more on the dryer side alltogether it was ok to eat but for me the fundamentals need to shine trough. They gave us a creamy chilli sauce with was they’re style if Banh mi which was good but.. if ur like me and u clearly want to know what u eat pick the other ones and find out urself.
It’s definatley packed to make u stuffed but for me it needs balance meats & veggies need to compliment each other the breaf needs to be crunchy but fluffy inside to carry all the Paté & mayonnaise which is the bed for the rest to lie on and shine trough.

Read moreI wanted to try both 'Bánh Mì Phương' and 'Madam Khanh - The Bánh Mì Queen' And compare them myself so, I stood in line at Phương (about 5 minutes) and ordered BBQ pork with pâté and chili. Then, I walked to Madam Khanh and ordered the same BBQ pork with pâté and chili, which I received in less than a minute because there was no line. I then walked back to Phương, where my girlfriend received her Bánh Mì just as I arrived (14 minutes of walking total). The price was the same at both shops, 35k. Now, for the Bánh Mì itself: In my opinion, Madam Khanh's was better overall as it had more meat and the flavor of the BBQ was stronger. My girlfriend preferred Phương's, saying the flavors were more unique and balanced in her opinion. One thing I noticed is that Phương's Bánh Mì didn’t have any cilantro but did have yellow bell pepper and lettuce instead, whereas Madam Khanh's had cilantro. Also, the chili in Phương's wasn't spread evenly, and we had a bite that was really spicy. Both had the same ingredients otherwise. After I arrived at my hotel in Hoi An, I walked 15 minutes here as my family and parents rested. When I arrived the dining area was full and there were a couple people ahead of me in the take out queue. Surprisingly, they were Vietnamese and another was waiting for their order. When I scanned the menu, I could see why, the prices were very reasonable and very affordable. Which I really respect as they could have been greedy and cashed in on their success, it's great the locals can also enjoy it. I ordered two fully loaded Banh mi's and a vegetarian one for my mum, total cost 85k VND for all 3. What a bargain! It's a very different Banh Mi than I'm used to, the shape itself is different but also the baguette. It's denser and chewier than the Banh mi's I'm used to, with a crunchy outer shell.
