The restaurant is inconspicuous from the outside, a common theme in Japan. We arrived at noon and were presented with the sole menu option: omakase at ¥15000 per person. Furthermore, we ordered some hot sake and some plum wine on the rocks.
The service is excellent. The young apprentice is attentive and kind. The sushi master gave us information about the set course and made friendly banter, revealing to us that he has 30+ years of experience. Thus, we got excited for what turned out to be an excellent meal.
After a simple yet delicious salad, the nigiri were prepared with great craftsmanship. Mackerel, shrimp, squid, tuna and many more, all pieces were amazing. Firm, fresh fish and perfectly cooked rice. The fatty tuna in particular was delightful, one of the best things we tried during our stay in Japan. The course ended with a few pieces of maki, sweet omelette and miso soup, as usual.

Sushi looks simple, but – Each day the chef chooses ingredients depending on what is best. – The order of the course is carefully planned. – Aging and storage control the flavor and moisture of the fish. – Cuts and scoring affect the texture. – Garnishes are chosen to match each topping. – The amount of sauce brushed on is adjusted for every piece. – Rice is cooked and seasoned precisely. – The rice is shaped so you can pick it up easily, but it falls apart gently in your mouth.
