Sometimes the best food is the simplest food. These quesadillas were delicious - I was taken back by how the combination of cheese and tortilla could be so delicious! We tried the quesadillas with the papas, chicharrone Prensado, Picadillo, Tinga de Res, and Frijojles. The papas were my favorite. Despite being vegetarian, the potatoes were very flavorful and perfectly "al dente." All the meats were also perfectly seasoned and juicy. It was a great experience watching her press the tortillas and then cooking the quesadillas on the grill right in front of you.
A couple of tips - don't let the line deter you. It moves quite fast. We also wanted to try the flor de calabaza and tinga de polla but when we arrived at 2:30, they had already run out. If you would like to try those fillings, would definitely try hitting...

Word of warning for any other non-spanish speakers is that they're super busy during peak times (I went around 12pm on a weekday) and there is no one dedicated to take your order - both ladies working there are both actively moving and cooking so you will just need to tell them your order whilst they're doing their thing. The ladies were hard at work turning out the menu as quickly as possible to eager guests. Chef had hands of steel as she effortlessly picked up scolding hot tortillas and toppings.
Moments like these make me appreciate what I have in life and how hard it is to make something fantastic in this world worth having.
I questioned why they didn’t have a restaurant as I sat on the side of the street. Enjoying the delicious quesadillas. (Papas, pollos, champinon) all fantastic but the star was the pollos 9.7/10
