Was seated in the 8 PM, second seating of Sauvage, on opening night August 28th. It was an exceptional experience in every aspect. I arrived at 7:45 in the rain and secured a parking spot right in front of the restaurant on Commerce. Valet service is complementary at the Statler, but why not take advantage of front door parking if available? The interior of the restaurant is beautiful and was conceived and executed by the owners Casey and Amy Marie La Rue. The subtle but elegant finishes are beautiful and welcoming. The L shaped counter seating 12 is on 2 sides of the open kitchen, and all 18 courses are served directly from the 3 chefs, Casey, Ben and Oscar. James handles all beverages and supplements the service. Amy handles all baking but had left before the second seating. Every course was unique and flavorful, and served efficiently. A highlight were the three courses featuring different varieties of caviar, but honestly every course was superlative. It was the perfect amount of food, and all that I left on any plate was a couple of bites of one dessert. Just couldn’t eat anymore. Overall it was an outstanding evening and I look so forward...
Read moreAte here last night with my wife for a celebratory dinner. We were super excited to see the team behind Carte Blanche is back in action.
Food and atmosphere (which was laid back and fun) were incredible. Surprisingly, the front half of the menu was what really shined as the presentations and sauce work were off the chain. The mains were all great as well but not quite as refined as the initial courses. Dessert courses were playful and flavorful.
We opted for the "Drink pairing" (note, not wine... they had cocktails mixed in) and think that was a home run for the extra $110.
Regarding service - they're clearly still working out a couple of small kinks but that's to be expected with an ambitious restaurant that's not been open that long. This is a minor nit.
It's probably worth noting that if you're looking at / considering this restaurant you understand what you're getting into. This is, by no means, a "value" of an experience. But there are few restaurants in Dallas that offer this level of intimacy and attention to detail with food.

The food was fantastic. There was nothing (of 17 bites in about 12 courses) we didn’t at least “like a lot.” Many bites were loved - the kind of bites at these places where you wish you could order a whole pot of “just that one.” I don’t really know how to write about food, but we do like great food. We’re not newbies to fancy chefs’ courses or Michelin-starred feasts. So maybe our palates are experienced without being learned? But the menu will have to provide most of the description there. In any case, the food was fantastic and uniquely delivered.
The smells, the wood firing, the location in the Statler (which we also think is cool), the chef’s counter approach, and the “lodge” ambience all worked together to make the atmosphere unique. Plus the service was great - and the people doing the service were down-to-earth, happy to answer my nerdy questions, and very skilled.
You’ll have to decide if the price is worth it, but we are so glad we went and hope to save up...
