OVERRATED! Would not recommend.
When we arrived they didn’t really make us feel welcome - no friendly „hello“, but a rather tired/annoyed „table for 2?“. The waitress was nicer but unfortunately she messed up the salad order and I received a salad with cheese (I am vegan) and a total different one I ordered. She clicked the wrong one she said and came back later with the correct salad. My husband had the mushroom flatbread which came with garlic although the menu didn’t say it - he isn’t a big fan if garlic. Otherwise it was good, he said (Edit: to him the flatbread only tasted like garlic and back at the hotel he had to throw up because of it). I ordered the Summit Stir Fry which came with cilantro although the menu didn’t say it and I cannot stand cilantro it ruins every meal completely for me (I know there are lovers out there by I am not one of them - we exist). She asked me if they can remove it or if they have to redo it. That for me was so unprofessional and I expect mire from a restaurant that considers itself „premium/high quality. Anyway, I didn’t want to be a total d* so I asked them to remove it. It came back with only a few cilantro pieces left and with a new purple daikon, which the waitress seemed to be really proud of since the other purple daikon had cilantro on it, what mercy of them to give me a new purple daikon. The stir fry was not really good. Honestly I could do it better. It had like 3 pieces of overcooked tasteless broccoli and 3 pieces of cauliflower, and probably 1/2 mushroom. I expected it to be filled with veggies - also it was super spicy, a little bit too much.
The vegan cake was good but it wasn’t very chocolaty.
They gave us a 10% discount because of the messup but well…we still spent way too much money there. Wasn’t worth it.
The wine was good, but 17 $ a glass?!? Crazy.

We dined at Pure Kitchen because of their many vegan and gluten-free options. We ordered the spring roll, which was very tasty but very light in calories. Our entrees included the Zoodles Bowl, Summit Stir Fry and the Poblano Alfredo. Overall the entrees were good. The one issue would be that the Poblano Alfredo did not taste like poblanos and the sauce did not have the texture of alfredo. We also shared the flourless chocolate cake. We thought the texture was nice however it was lacking in flavor. We did enjoy the raspberry puree.
The service was on point in the beginning. After the entrees were served, the server did not check back with us for a long time. She did appear to be busy, however there were a lot of staff members and perhaps she could have asked for assistance.
Overall we did enjoy this restaurant and will return. Hopefully they can make a few tweaks to ensure the flavor profiles are as described. We do applaud the effort to add vegan and gluten-free options and understand that can make some recipes a bit harder to create.
UPDATE: finally got to return. In the towns of Dillon, Silverthorne and Frisco, this is the only restaurant that had vegan and gluten-free options.
We ordered the brussels sprouts and 2 noodle dishes. I loved the appetizer and thought the noodles were good. I'm a big fan of fresh ingredients. My partner didn't love his entree and did not eat much. Portion sizes were fine.
Oddly, service was off again. I believe the expeditor brought out our entrées. He practically dropped our dishes and ran off - didn't ask if we needed anything else or tell us to enjoy our meal. And the server didn't return to see how the meal was. She showed up when we were done eating. Maybe this type of service is standard at this restaurant. I tipped well...

Upon our arrival, after an 1.5hr drive down the mountain, the restaurant had just reached its capacity due to COVID regulations. It was no big deal, they dont take reservations, I was really looking forward to it, so we decided to wait the 20-30mins for a table.
As we played with the kids in the back of our 4 Runner, we sat and watched as a few groups of people had wrapped up their meals and left the restaurant. We thought to ourselves, "oh, we might not have to wait as long as we thought.". As time more time passed, we watched as groups of people pulled into the parking lot, one after the other and be sat right down. I am a very patient man and let things roll off easy. However, after waiting 45mins of our 20-30min wait and watching 4 different groups of people pull into the parking lot to be sat right down. It appears they were being selective of who they sat down at their restaurant. Realizing this, we decided to leave and just head home.
