During a recent visit to Las Vegas, my dining companions and I had the pleasure of dining at 8East, a restaurant that has quickly topped my list of must-visit spots in the city. From the moment we walked in, the open kitchen concept caught our attention, allowing us a sneak peek into the magic behind the meals we were about to enjoy.
Our culinary journey began with the short rib dumplings, a dish that set a high bar for the evening. The dumplings themselves were tender and flavorful, but it was the horseradish cream sauce that truly elevated the dish, adding a zesty kick that we couldnât get enough of.
Next on our table were the stir-fried green beans, which were anything but ordinary. Paired with ground chicken, this dish was a delightful mix of textures and flavors, showcasing the kitchenâs ability to transform simple ingredients into something extraordinary.
However, the real highlight of our meal was the brisket fried rice. This dish was not only a testament to the chefsâ mastery over their craft but also the star of our dining experience. Each bite was packed with savory goodness, making it clear why this dish is a favorite among patrons.
One aspect of 8East that deserves special mention is the portion sizes. Designed to be shared, the dishes allowed us to sample a wide array of flavors, making our dining experience both diverse and satisfying.
Beyond the food, what truly made our visit memorable was the bustling yet harmonious atmosphere. Watching the chefs and servers work tirelessly to ensure each patronâs experience was top-notch added an extra layer of appreciation for our meal.
A special shoutout to our server and bartender, Jimmy, who was phenomenal. Jimmyâs friendly demeanor and extensive knowledge of the menuâs best bites significantly enhanced our dining experience. He was quick, efficient, and it was evident that he is passionate about ensuring his guests are happy.
In conclusion, 8East is not just a restaurant; itâs a culinary experience that delights the senses and brings people together over great food. Whether youâre a local or just passing through Vegas, this is a dining destination that you wonât want to miss, made all the more special by the exceptional service provided by Jimmy...

Las Vegas, a city where dreams and neon lights intertwine, led me to a culinary haven called 8 East at Circa. This isn't just a restaurant; it's a testament to the city's relentless pursuit of the extraordinary.
Jerry, our server, was a craftsman of hospitality. His service was swift, precise, and delivered with a warmth that only a genuine smile can convey. He navigated our gastronomic journey with the expertise of a seasoned maestro.
But the excellence in service didn't end with Jerry. Chase, another ace in the deck, matched Jerry's prowess step for step. Together, they were a dynamic duo, ensuring our experience was nothing short of stellar.
The culinary odyssey began with short rib dumplings, each a masterclass in flavor and texture. The brisket fried rice with fries was a rebellious twist on the traditional, a dish that boldly declared its uniqueness.
Sipping on Sapporo on tap, the perfect foil to our meal, I mused over the simple joys of a well-crafted brew. And for those who prefer a different kind of fizz, yes, they serve Coke Zero.
Then came the pièce de rĂŠsistance â the pork belly bao. Chase and Jerry weren't just recommending a dish; they were introducing us to a revelation. To call it "sex on a plate" might sound like a culinary clichĂŠ, but it was anything but. It was a symphony of indulgence, a celebration of flavor that made you want to savor every bite, guilt-free.
The speed and efficiency of service were remarkable. With Chase at the helm, our feast was before us in mere minutes, yet every dish felt like it had been prepared with hours of dedication.
8 East is more than a mere stop in Vegas; it's a destination. A place where each dish is a story, every server a storyteller, and the entire experience a chapter in the grand narrative that is Vegas. As someone who always sought the heart of a city through its food, I can say that 8 East is the beating heart of Vegas'...

We got seated right away and ordered a bunch of items to share. It came out super quick. Thereâs a long bar and behind the bar is the kitchen.
We shared between 3 people: -Pork Bella bao: came in two baos for $14 Had Cucumber pickles, caramelized pork belly. -Chicken yakatori ($8): 2 skewer thigh meat with a kick of jalapeĂąo sauce -Crispy Pork belly bacon ($14): slowed cook for 6 hours, semi dry and was crunchy. It came with tamarind dipping sauce which can also be mistaken for the Filipino mang thomas sauce as it almost taste the same. -Cumin Lamb chops ($15): basic lamb chops seasoned with salt and pepper and cumin. Iâm not a fan of gamey taste but I tried a piece and it wasnât gamey. It actually needed more flavor. It was bland. -Duck roll: itâs like a thick slice of one inch burrito cut in 4 pieces. Itâs small for $14 but very flavorful. -Popcorn chicken skin ($12): my least favorite but my bf loved it. Itâs just crispy fried pork rinds (chicharrones). I donât like the part with the chewy meat, I just like the crispy part.
For drinks I got Coconut Breeze beachside it was sweet and refreshing with a taste of alcohol.
Also got the Purple Spring Raw Puer tea which was oolong tea and the server said itâs a hit or miss and let us try the pot. If we didnât like it then we can switch it out. My friend doesnât like the earthy herbal oolong taste so we switched to Sunrise Keemun Black tea.
They have whisky flights that I would to...
