Vida's food is top notch. We were there for a nice upscale family breakfast while staying at the Fontainebleau and it absolutely didn't disappoint. When I judge restaurants on the Strip, I always ask "would I have come to this hotel just for this restaurant?" Vida absolutely passes this test.
First, the decor is awesome. It has this upscale brass look married to a nostalgic brasserie set up. The seats were comfy, the open air setup was inviting, and the cutlery was great. Very seldom you get this ambience in a breakfast-serving joint.
Now the food. Everything is fresh. Fresh, fresh, fresh. The OJ is absolutely squeezed. All the cut fruit was done so within the last hour. The quality of the fruit was great. The coffee was fresh as well.
But the highlight of the show was the Brown Sugar Swirl Pancake. It is perhaps one of the best pancakes I've tasted, with well balanced flavor and texture, and mixing in ingredients that come together beautifully. The outside of the pancake is "crispy" while the inside is not too thick to prevent stuffiness. Plenty of blueberry and it's jam, topped with a orange marmalade sweet cream. And the chef added cookie crumbles to add to the extra crunch. The brown sugar in the batter came through beautifully, and combined with the maple syrup and butter, it literally was a slice from heaven.
At this point, there's nothing more to be said. The service was amazing. Did I say the coffee was fabulous? Yes, the server missed our yogurt parfait but thank god he did cause we were absolutely stuffed.

So, Dante didn't write the order down and repeated it back (incorrectly) three times. This happens, I get it, he's training his mind. The food did come out correctly so no harm, no foul.
BUT...
They had to come back 3 times to ask what we meant by "scrambled dry." Do you mean over hard? No. Scrambled dry is not some secret insider off-the-menu order, it's just eggs scrambled until they're dry. It's in the name. But the waiter, his line cook and the manager had supposedly never heard of it. But the Chef - who was away from the kitchen when the order was made - did know (supposedly) and just wasn't around to tell them... I don't know, super weird.
Also, there were way more staff than customers - which is good on an opening weekend like this, but they were very chatty and casual which kind of killed the upscale vibe that the place has.
It's very googie-architecture and art-deco. The style - like everything in the FB - is amazing.
The food was pretty great, standard brunch fare. They have a lot of vegan options, but no sugar free syrup for diabetics. Which begs the question - are the more vegans than diabetics in Vegas? Is this why they don't know how to cook...

Despite many larger and more comfortable tables being available, we (two Asian guests) were seated at a tiny, cramped two-person table.
What shocked us even more was that several white couples who arrived after us were all offered spacious four-person tables, without hesitation and with a smile.
The hostess who seated us was dismissive in her manner, which added to our discomfort. We also noticed that other Asian guests were placed in less desirable seating areas, while white guests appeared to receive preferential treatment. We hope this was not a case of āunconscious discrimination,ā but simply a bad experience.
