Just tried Novatore and wow, this place is amazing,beautiful with a vibe that hits different from other Italian spots in Miami.
The bread they bring before your meal is absolutely incredible with that house-made butter and little pastries that make you wonder how something so simple can taste so heavenly, and I found myself asking for seconds even though I knew I should save room for the actual meal. The appetizer bread with sauce is to die for when dipped in their rich, slow-simmered ragu which had such depth of flavor I couldn't stop soaking up every last bit of sauce on my plate. The artichoke appetizer was perfectly grillled, tender inside with that smoky char that brings out the natural sweetness of it.
But the salmon? Out of this world good with a perfectly crispy exterior while remaining buttery and moist inside, seasoned with herbs that compliment rather than overwhelm the natural flavor of the fish, and served on a bed of something green and delicious that I couldn't quite identify but couldn't stop eating.
Make room for desert because even though I was completely stuffed, I still managed to devour the panna cotta which was silky smooth and just wobbly enough, topped with a seasonal fruit compote that balanced the richness perfectly.
The staff is mostly authentic italians that they brought from Italy, and it shows in there attention to detail and knowledge of the menu, answering every question with genuine enthusiasm about the food rather than the rehearsed descriptions you get at most places. Our server could tell us the exact region each dish originated from and had stories about eating similar foods growing up!
The chef is a master chef and you can taste his expertise in every carefully crafted dish that comes out of the kitchen, where traditional recipes are respected but given just enough modern interpretation to make them exciting and fresh.

I took the Miami spice option, and added extra truffle on my caccio e Pepe.
The appetizer ( egg with truffle ) was good, taste and presentation was there. Unfortunately this is not Italian at all.
The caccio e Pepe is made smoked, which is different but more Spanish type of dish than Italian. I ate few bites and started having an allergic reaction to it. My tongue started itching and getting bigger so I decided to stop eating it. The waiter came to ask if I liked it I said I think I am having an allergic reaction. He asked me if I wanted something else and I said no thank you.
The desert came, and seeing other reviews I realize mine was missing the pistachio sauce ??? Didn’t really taste much pistachio, more like marzipan.
The bill arrived and at my biggest surprise I didn’t even get a small discount I didn’t even eat the main dish, on top of this the waiter asked me afterwards if I am a local, and I do live in Wynwood. He said that they give a discount for locals.. maybe ask before bringing the check to the table.
A 20% gratuity is already included.
Total of 109$ for one person. Miami spice 60$ , Yes I did take an extra of truffle + 12$ , mocktail 15$ which is expensive for juice.
