Overall if you have a decent palette and you are looking for desserts made with fresh & natural ingredients then it’s not the place to go. Almond croissant was average, the dough itself wasn’t that good and wasn’t enough cream to compensate. Almond chocolate was good enough, 8/10. Pistachio choux is ok but the way cream is a bit separate from the puff and the puff is not that good by itself is strange to me, the cream was hard and didn’t really fill the sides. Nutella choux was pretty much empty inside and the cream was not delicious at all. Paris-Brest is made with cheap ingredients, the dough is average and the cream taste like the cakes I used to eat back 10 years ago, that were like $1 a piece (barely any actual hazelnuts used for the cream but rather sugar and butter, giving it very artificial and unhealthy flavour). The class was about two hours long and learned about the different elements to making their signature cream puffs. Rebecca taught us how to make our own Italian meringue and various whipped-cream fillings/toppings, how to pipe and decorate, then left us to freely decorate18 cream puffs with the various fillings and toppings of our own choosing. Italian meringue-topped puffs were filled with lemon and passion fruit curd. Whipped-cream-filled puffs were made with coffee, plain, raspberry whipped creams, and a chocolate ganache filling. Was hankering for some chocolatey concoction, and this caught my eye. Wasn’t disappointed at all. It wasnt cloyingly sweet. Just good enough. Yum!!! This is a pastry shop in the West Village that specializes in “French cream puffs and other French and American inspired sweet delicacies.” Well, after having this cinnamon bun, I am so going back for their specialty.
