If you’re accustomed to delicious Mexican food (even mediocre Mexican food from a taco truck) you’ll be disappointed here. We visitors this truck twice during the week of September 12, 2022. The first time we liked it. It was a weekend and they had their Taco Specials which included lengua, tripas, buche, and some other favorites. I enjoyed those tacos although they were very small portions. When I say small portions I mean meat to tortilla ratio. The tortilla they were using was about 3x too large for the portion they were serving. They also forgot my side of rice and beans. The second time I ordered a burrito which probably should have just been thrown away. It was soggy (it wasn’t a wet burrito), had way too much wet lettuce, almost non existent meat, and again way too much tortilla for the portion they serve. They also forgot to add beans to the burrito and I had to get it remade. Not a huge deal but lends to their lack of attention to detail and general lack of care with...

Positives: Nice flavour of the meat, the refried beans were good and the spice level was on point. The people who worked there seemed happy and positive.

Negatives: Very expensive for the amount of food you get. I purchased a children's quesadilla and El Rancho Burrito, as seen in the photos. The lettuce in my burrito was so limp, I have never had lettuce in a burrito before, I had to take the slimy leaves out before I could eat any more of the burrito. Further to this, my burrito was half empty and all the filling fell to the bottom as I started to eat. At 8 dollars I would have expected the children's portion to have at least a little bit more. This is more like a toddlers portion and I wouldn't pay more than 4 dollars for what we got. I also saw that a microwave was used for a portion of the meal which is very disappointing.

Currently, the negatives far outweigh the positives, and it is disappointing as there is so much potential. I hope this feedback could be used as...

This is my second experience at this food truck. We ordered a steak burrito, two of the 2 enchilada combos with steak tostadas, and a two tamale and enchilada combo. Order came quickly even though they were very busy. Burrito was huge and outstanding! Chicken enchiladas were on the smaller side but very, very good. Chicken tamales were also on the smaller side but very tasty. The tostadas were Taco shell sized and piled up with delicious carne asada. I asked our family who came with us and was VERY apprehensive about dining there how they'd rate the food. They said a definite 10 of 10. Prices are generally in the $13+ range. The atmosphere gets a hit since it is an outdoor food truck. They did have some picnic tables and we could see the sunset between the buildings across the street. Phenomenal food. We ordered the quesabirrias, burrito mojado, and asada fries (not pictured) for takeout after a long day of hiking. Everything was seasoned really well, the meats were full of flavor, and the fries were hot and crispy. In particular, the quesabirrias were my favorite as the slightly crispy tortilla shell paired well with the warm beefy soup during the cold rainy weather. My only minor critique was that the salsas they gave on the side were not that spicy. The portions were very large and each dish was fairly priced for the area. The food truck appears to be a family-run business and they were very quick about getting my order completed. My family and I have been traveling in the Yellowstone area for several days, and it was great to have some delicious Mexican food as a break from all of the burger and pizza places. Definitely try this place out if you are in West Yellowstone!

Huge disappointment! Not crisp at all, no flavor, the consommé seemed watered down, as there was no seasoning. My wife had (#12) the enchiladas and tacos were also lacking flavor but the meal was full of meat. The only entree that was boasting with flavor was the poblano chicken taco. This is the single item that I would return to this truck to eat! Also tried the churros- warm, fried dough - hard to mess up. We had a lot of expectations for this establishment, perhaps we set the bar too high or it was their first weekend making the dishes with a new cook. Perhaps the dishes have to be bland for the tourists- but everyone deserves to have a flavorful meal.
