I'm not a huge noodle soup person so I always prefer to have the soup on the side, and the chicken soup was just excellent! It reminds me of my home country's very own chicken soup (tinola) but made better. (Sorry to any kababayan who gets to read this review, I know I must love our own above all else but I really haven't had a tinola that's better than this.)
The noodle texture was so nice and smooth that I couldn't stop slurping it, and before I realised it, I've already finished all the noodles without even eating half of the chicken in my bowl, which is actually very unusual for me as I typically eat all the meat first and save the carbs for last.
The chicken meat was unlike any chicken meat I've had in all the years that I've started eating chicken. The texture was almost like duck or goose meat, but the flavor was definitely chicken. I keep wondering how they did it, and the only presumption I could come up with is that the chicken breed they used must be extra special, or whoever made it must be extra special, or both... I'll never truly know unless I move to Hanoi, learn the language, befriend the owners, and maybe beg to know their secret.

After ordering our pho (took less than 5 min) I tried the soup as soon as I could. As soon as my tastebuds came in contact with this heavenly soup my third eye opened and I truly understood what pho is and what divides this pho from the other “pho’s” I tried. This was in no way in the same league as the others. It was as if I was trying to compare amateur football against world club level. If this was football, it was as if I was trying to compare Messi in this prime with a amateur football player in the 40’ers from some small town in Europe.
