Ya know, the story of this place is its inspiration from Edwin Carter who traveled west in 1868 to try his hand at gold mining. He quickly became distressed at the impact the mining industry. What Edwin should have been distressed about is his name being used in this pretentious 7/11 type food and drinks.
Frankly, the pizza was undercooked, I mean how can a "chef" serve undercooked crust. The mojito (there was a mixup and it took 30 minutes to come out, tasted like overly concentrated lemonade with a small leaf of mint floating in it.
The wedge salad - oh my god, it took over an hour to be served was a God forsaken wedge (means just a slice of a head of lettuce, I know it's a complicated preparation as cutting a head of lettuce requires lots of culinary training.
This is a pretty place however, I simply don't understand how anyone can give this place over 2 stars.
Cassoulet: vegetarian - I believe the entire flavor of this lovely French dish comes from some sort of a gamey meat (well, not here). It's Vegetarian.
A lovely Asian family behind us (my kid speaks Chinese) said they were beyond confused how bad the food was.
Oh Edwin, Edwin, I am sorry they used your name for this monstrosity. Not only do I want 2 plus hours of my life back but I want a drink to forget this evening and I am pretty certain, it will not come from this bar. What a sad disappointment. Management and ownership should be ashamed
The server was great however, we wanted to get our check as half of our food did not arrive 2 hours in, we asked for a check and the server came back and said "the manager said, please just leave no payment needed". To be fair, we did leave cash at the table as they are business but tonight was simply bad. Hats off to the server.

Read moreOverall good atmosphere and contemporary decor, though some of our group had the feeling of being in a hotel restaurant, which it is. Probably a multipurpose room. The menu is a bit limited at this time. 4 entrees and pizza for mains. Plus sides and apps.
There is a large bar, but their featured cocktails were very limited. The ones we had were fine.
Caeser salad was good, fresh and crisp. Bread for the focaccia was a bit boring. Brussel sprouts were well seasoned. Most had pizza. Unfortunately, all of them were undercooked. Soft undercooked crust. Server, to her credit, informed the pizza chefs. Looking at others coming out later they appeared to be more cooked. But that shouldn't have happened... I had the trout, which was good.
Being in a town that can be tough to park, the validated valet parking was nice.
We will give them another chance, but not until next season after they settle in more. At this time, they seem to be focused on serving hotel guests. Based on the article in Summit Daily, I...
Read moreGood food and gorgeous design, but expensive for the level of service. Our Waitress was no smile, asked us to repeat everything because the music was so loud, and was not at all friendly. We ordered drinks and the fire alarm goes off before we are served. We have to leave. A manager comes by and says don't worry, just smoke in the kitchen, and then others forced us to go across the street until the fire department clears it. 30 mins later we are told we can return. No apology, no let me comp the appetizer for the inconvenience, just back to business with no acknowledgement of the disruption. It could have been handled better and been an opportunity for a service oriented organization to shine. They did not. As good as the food is, the lackluster service makes for a...
