This recently-renovated restaurant looks nice & sleek on the inside. We were thankful that we could get on a waitlist via Yelp, and the host stand folks were super-kind & attentive! I like how they have made the dining room more accessible so that all the booths & tables are on one level, making it easier to get to your seat. Unfortunately, it was pretty warm in the restaurant; I was even sweating a bit. And so loud from the dining room packed with patrons that it made it extremely difficult to have a conversation. Maybe also because no carpet to absorb the sound like they previously had (I get it: carpet gets filthy, but something has to give.)? Bathrooms are not gender-neutral, nor do they have a button to press if you need help opening the door. The men’s room could use some attention, as there was poo wiped on the wall in the stall, a worker’s rubber glove in the corner on the floor, and someone’s chewed gum on top of the urinal. Plus, they have fancy sinks, but you can barely fit your hands under the faucet to wash them.
The service was pretty mediocre. The server didn’t know the brand of root beer, when they only offer 2 soda choices: can of Pepsi or bottle of what I later learned from looking at another table was IBC. We had to ask several times for refills of empty water glasses & empty $4.00 cup of coffee (tastes ok). I had to ask another server for coffee refill after asking our server for refill that never happened. I also asked for jam/jelly for my biscuit when I ordered my omelet. It, of course, didn’t come out when omelet was delivered. So, I asked the server who delivered our meals for jam, which was quickly brought back. Then I told our server that someone had brought me some jelly, and now I asked, “What is it?” Maybe I should’ve asked what flavor it was because our server’s unhelpful answer was, “It’s jam.” Turns out it was a yummy strawberry apricot jam.
I was surprised & disappointed that they took the smoked salmon off the menu since we were last here in early December right before they closed for renovations. I was looking forward to the avocado toast with smoked salmon in place of the bacon that typically comes on it. Because of that blind side, I needed more time to look over menu for Plan B. We ordered our kid’s chicken tenders so that he could get eating while we waited for our food. His food took a long time to come out, and we had to send it back for a remake because the “tenders” were thin, dried-out & overall sad. My wife ordered two “shareables”: the Buttermilk Biscuit & Sage Sausage Gravy, along with the Billion $$$ Bourbon Bacon. She thoroughly enjoyed the biscuit gravy, but she wished the bacon was a thicker cut. I ended up ordering a BYO 3-egg omelet. You are allowed 2 ingredients as part of the $14.00 cost. I had spinach & red pepper. Even if I had ordered avocado as my 2nd ingredient, they would’ve charged me an extra $2.25. Needless to say, I passed on that! My 3rd ingredient was cheddar cheese, which I had to pay $1.75 extra. My $15.75 omelet was pretty good, though I found a small chunk of diced ham in it. The hash browns weren’t too bad, though I’m not a huge fan of hash browns on the regular. The biscuit that came with my omelet was fine, but a bit overcooked & hard.

Read moreAtmosphere: Tastefully dim lighting makes breakfast great whether or not you have a hangover. The exposed brick and modern art juxtaposed the wood paneled walls decorated with burlap sacks and other food-related decorations melded better than one might expect. Small plaques describing how “coffee is better than people” and how “I Like Big Cups” make it feel almost like someone’s home as these decorations were probably purchased as a major outfitter of home furnishings. Everything tied together that made “Urban” seems apropos and nothing was off-putting.
Food: Pictured: Blue corn juevos rancheros with red chili and chorizo with a side of hash browns. The hash was cooked perfectly and had an excellent mix of crunch and buttery goodness. A splash of hot sauce (jalapeño with lime) kicked it up a bit further.
The juevos were also excellent. The blue corn added a layer of crunch to the rest of the dish that made is stand out from other juevos rancheros we’ve had in the Springs. The colorful plating and fresh ingredients made for an example to be emulated—get this at least once!
Also pictured: The 2 egg breakfast was—say it with me—excellent. The thick toast paired well with the hard-scrambled eggs and the buttery and crunchy hash browns. It’s a pretty basic dish one could find anywhere but Urban Egg brought it to an artisan quality.
Strangely enough, our amazing food came out hot in only about 5 minutes. No hyperbole here—it only took about 5 minutes. It’s impossible for any restaurant to do this every time, but to do it at all at a sit-down restaurant like this is truly impressive.
Service: Servers presented smiles at every opportunity. They didn’t need to since they all wore masks, but they did anyway. The entire place sounded alive with the sounds of kitchen staff and servers clinking dishes and shouting for orders. “Morning people” discussing business and travel and politics jostled one another—but not uncomfortably.
The general manager stopped by as well. Despite a busy morning, he made the effort to check in. It’s a small thing but it speaks to the professionalism happening behind the relaxed atmosphere. To our surprise, he also brought us our food. For a member of management to cover down during a personnel shortage further speaks to this establishment’s desire to provide a quality experience.
Overall, this visit was the best it probably could’ve been. Make the effort to stop in here. They didn’t hire people who’d rather be anywhere else—an unfortunate side effect of hiring teenagers and college students—so it was refreshing to see so many employees who seemed to actually be enjoying themselves. Read moreWe've tried to go here several times but it is always slammed - I don't know if they do reservations but on weekends you'll wait quite a while to get in. We finally got in on a weekday around lunch and it was much less busy.
Urban Egg is a corporate restaurant - they have lots of locations across Colorado. It's clear someone took a lot of time designing the menu - it's well thought out with lots of options.
Service is meh. The servers seemed exhausted and uninterested - but we arrived an hour before they close and so I can't beat them up too much.
I hate - hate - the digital order entry systems Urban Egg uses. They show the servers down and the tip screen is cumbersome and slow. They're also covered in greasy fingerprints and the last thing I want when eating at a restaurant is to run my hand over a filthy touchscreen. Urban Egg management should rethink this part of their operation.
The food presentation was great - whoever is working in the kitchen did an exceptional job making every plate look like a masterpiece. Overall very good food. Hash browns were a little undercooked.
Even though I was a little underwhelmed by the service, the food was excellent for a chain restaurant.
