A Culinary Catastrophe I cannot express the level of disappointment we experienced at Splendido (for perspective, we have dined here for the last 18 years). The owner/chef of the last 7 years should be ashamed that when he assumed ownership, he managed to ruin a fantastic restaurant. Apparently Ackerman has a captive audience among the octogenarian crowd, so perhaps he will continue his foray in serving bad food. Sad. The younger, more educated and well travelled crowd knows better and dines elsewhere. Our recent visit to what previously had been an elevated experience was utterly appalling in regards to both service and menu/quality of food. To be fair, I gave Matt (manager) the opportunity to discuss and never received a returned call. Our bill for three was well over $400 and that included only 2 alcoholic beverages. Ironic that our bill included a 4% "HOSPITALITY" fee. Hilarious.
Let's begin with the food, I had the misfortune of ordering their signature filet, hoping for a mouthwatering, succulent piece of beef that would justify their exorbitant prices. I was presented with an overcooked (ordered medium rare) filet which was butterflied???? What? They effectively cut a 3 inch filet in half, reducing it to 1.5 inches. Beyond bizarre! The audacity/cluelessness to butterfly such a high-end cut is criminal.The Halibut (my husband ordered) was also overcooked and had a "skin" on top which made it tough. The menu description for the halibut included potato (the waiter claimed it's not actual potato, it's in the sauce? Weird!) The sashimi tuna appetizer had egg crumbles on top...shouldn't egg be part of the description on the menu or even after we asked the waiter to describe the presentation/ingredients it wasn't mentioned?
Now, let's delve into the service, which was, without a doubt, the most excruciating aspect of our nightmarish dining experience. From the moment we arrived, there was no one to greet us. We were on time for an early dinner reservation. I literally had to walk to the back of the restaurant to find someone to seat us. What appeared to be a waiter, told us to go to the front. I told him no one is there! He begrudgingly walked us back and appeared irritated that he would have to host and take us to our table. Stunning! The lack of warmth and hospitality was palpable and set the tone for what was to come.
Our server seemed genuinely disoriented and incapable of remembering even the most basic elements of our order. I immediately asked to order their signature dessert soufflés as I had remembered that they take a good amount of time to prepare. Following dinner, our waiter presented us with dessert menus...I asked, did you forget that we ordered 3 soufflés? He said no worries I can get them out quickly. No, you forgot and the soufflés took forever to come out. Would it be too much to apologize to a guest and perhaps comp something for your forgetfulness? I am a kind and fair person, but we are living in a world where manners and common decency cease to exist. This some of the best food in Beaver Creek. You can dress casual or dress up. Lots of tables but always requires a reservation because it always sells out. It is connected to some of the most expensive and elegant private homes and condos in Beaver Creek. All of the food we had was spectacular. To start we suggest the Mushroom Potage, the Apple & Fig, and the Bison Carpaccio. All are just divine, melt in your mouth fantastic. Bread is served hot with a sweet salty butter we could not get enough of. Special app we had was the scallop ravioli which was a ten plus!!!! For dinner we had the Colorado Rack of Lamb and the Miller's Chicken. Lamb was served rare as requested and was super juicy full of flavor and it was A LOT OF MEAT!!!! 4 full ribs. She had the Miller's chicken which is cooked "brick" style and "Neapolitan" style. So top and bottom layers of white meat plus a darker center blend. We asked the waiter what was in the center blend and he said "horsemeat". We could not believe it so we asked another waiter who said he doubted it. Ask our original waiter again and we all laughed when he said "Forced Meat". Forced meat is when they take the dark meat, mix it with herbs and spices, and then force it through a press much like play dough so that they can make the final product in the shape of a brick. It was really lovely and we all had a laugh about "horse meat" which was not horse meat but was forced meat. Spectacular!!!! For dessert we had the Lemon Souffle which is one of the best in the world. Light, hot, like eating a sweet lemon cloud. Perfect. She had the apple pie and I had the chocolate croissant as well. Both were really good. The apple pie is a totally different presentation than you are used to but OMG is it good!!! Great service. Fun, funny waiters that really new their stuff. Read moreSplendido at the Chateau is the place to dine at when you’re in Beaver Creek. I’ve been a fan of Chef Brian and the entire team here at Splendido for years, they are simply the best! Upon entering the Chateau we received a warm welcome from the staff member who takes care of the coat check and then we were escorted to our table (I highly recommend making a reservation in advance). The menu is filled with unique starters and it might be hard to choose which one to go with, just know that they are all delicious. They make changes to the menu regularly to keep things interesting, but you can’t go wrong with whatever soup or salad they’re offering. Around this time they will bring out their complementary bread basket that is sure to warm your soul. For entrées you can’t go wrong with the Dover Sole or Prime Beef NY Strip, every time I’ve ordered it here it comes out perfect. We also ordered the Filet Mignon with Foie Gras which was fabulous. They are happy to split entrées for you, they do charge a split plate fee for that but it’s well worth it. Be sure to leave room for dessert because they do not disappoint! We absolutely loved the Soufflé and the special Hazelnut Tiramisu. We should have ordered two soufflés because I could have easily finished one on my own, but in all seriousness don’t skip on dessert here. This place is close to my heart and a culinary experience that should not to be missed.
