Edit based on owner response: They do have a patio for extra space. It was sprinkling when we arrived so we didn't even consider it, and didn't notice it from the outside. Also, if you would like additional dietary changes, ie veg/vegan substitutions, just ask. They seem more than accommodating despite not being explicitly listed on the menu.
Tldr: Pleased with the quality of food and quick service. Space is a bit cramped, especially for larger parties. Wish there were options to make non-veg dishes vegetarian or vegan friendly, such as substitutions.
Arrived at 12:30 on a Thursday. They were at about half capacity. You order at the counter and they give you a table card so they can bring the food to you. They also offer a computer kiosk to order contactless which is a nice option.
Important notes: the diner, drive-ins, and dives sampler is only available as takeout. It's expensive, so I assume it's a lot of food. Also, a 15% gratuity is included automatically when you pay and any tip selected when signing is in addition to this.
We were a group of 4 and grabbed a table large enough no problem. But, if you come at busy times with a group of 3 or more, you might struggle finding space. There is mostly 2 seater tables and space is kind of tight. Not sure how feasible pushing tables together would be.
Ordered the pork green chili bowl with tortilla. My s.o. (who is vegetarian) got the pancakes which are made from almond flour. Service was quick. Received drinks in about 2 minutes. Waited at most 10 minutes for the food. Utensils, napkins, water, and condiments are all self-serve. There are bus tubs to return your own dishes. There are also bins to separate your waste.
Having said all of that, I was very pleased with the quality of the food, especially the tortilla. Growing up Mexican, I've been spoiled on good flour tortillas. Not only was the tortilla delicious on its own, the fact that it's gluten free is an extra level of accomplishment. The chili was good on its own. Nothing out of this world, but I was a little bummed when I ran out of tortilla and still had chili left. The bite of pancake I had was also better than expected. Not too mushy and had good flavor.
Overall, I was quite pleased with the experience. As someone who is not gluten-free, I'm biased towards preferring glutenous foods. I find it pricey when comparing to other similar restaurants, so yes, even those who cater to specialty food. The portions and price don’t align.
The reviews on the quesadilla are spot on; disappointing for someone who is trying to have a quesadilla and expecting even an alternative to cheese. I would call it more if a grilled chicken tortilla flat wrap. It was $23 for my lunch and a small portion.
I went back another time and got the burger. As you can see, I didn’t get the full top bun. It was all over the place and I was charged for ketchup. I understand charging for extra condiments, but this is the first burger place I have visited, where I was charged for ketchup. It’s always included. (Unless you’re in Chicago and then they just laugh at you.) this was $24 and smaller than the quesadilla. Most places also include a small side like fries or salad or whatever. It’s fine they didn’t, but probably more of a $15 burger. There’s lots of places you can get a GF burger in Denver so I definitely appreciated the bun attempt as it was tasty and not the usual dry cardboard.
The Denver location always smells bad, and there’s no free parking.
I had some other experiences similar to some other reviews on here, and they’re definitely warranted so I’m a little surprise at the responses to them. It’s a new place and they should welcome the feedback.
I think I will wait several months and see if the hype dies down before returning. Maybe they’re just too busy for quality and price corrections, and I would like to try other items.
Oh, I tip for carry out and neither times did I get or was asked about napkins, etc. which is fine if there is a counter, but like others mention; it’s not a place that welcomes you as a new person. This would be a good point to take to their new location; you are new. People know nothing about you. Invite us in and tell us everything, even if you’re trying to automate. Tell us your favs, how to order, where to sit, about your website...

Came here with a group of friends because one of them had dietary restrictions and really liked this place because of the dairy free menu.
Firstly, I love the vibe of this place; Very cutesy, aesthetic and homey too. It's located in a very non-prime location, so quite a hidden gem!
I went for the Enchanted Seasonal Salad as a Wrap (no granola, added grilled chicken). This was Arugula, Pickled Red Onion, Roasted Beet, Almond Feta, Roasted Garlic Balsamic Vinaigrette. (I would have liked the grainless granola on there too, but I saw a pack of it for sale at the counter and the ingredients list was all nuts and seeds; too much Fat in the one wrap!) As for the wrap, I was genuinely very surprised by how well all the ingredients went together. Mind blown to be honest! That slightly sweet dressing and beets with the crunch of the almond feta was amazing. A very generous amount of filling and chicken as well; Quite a loaded wrap!
I also got some seasonal roasted veggies on the side just so I could eat some more vegetables as part of the meal. This was broccoli, carrots and mushroom.
One of my friends got the Wonder Seasonal Hash (Spinach-Cauliflower-Harissa Puree, Seasonal Veggies, Mint Chutney, Egg and Kale Chips). That looked like a boat load in a bowl, but apparently tasted good. They forgot to add the egg, and gave it when we asked.
