If I could give this place a zero, I would. The manager is in over his head and tries to cover up his mistakes with lies instead of taking accountability and trying to provide any quality customer service.. or solutions at all.
We booked this for NYE with high hopes and really wanted to like it.
I booked the reservation a month out. They cancelled my reservation two weeks later and messaged me saying that I needed to rebook and put a $100/person deposit down with a 20% tip for a special curated four course meal. We were looking forward to checking this place out for the holiday, so we put the deposit down. A week before, they messaged me again saying that they weren't having this special menu anymore and instead they're doing an a la carte menu. I should've known then to steer clear of this place because they were clearly disorganized and had no plan or vision.
Once we actually got to dinner, all of the food was either very weird tasting or completely bland with teeny tiny portions for the cost, not that you'd want anything to go. We ordered sides, apps, main entrees and even dessert. They say they're going for "simplicity" but it felt like they were trying too hard and ultimately failed horribly. None of it was more than tolerable at best. We barely ate the food and didn't take anything to go. At the end of the meal, we were surprised to get a bill without a credit since we already paid for our meal in advance. The manager came over saying that we were refunded. We showed him that we were not refunded just charged. He then said we weren't refunded yet, but would be soon. We expressed how displeased we were with the meal and the back and forth prior to the reservation that had led us to this point of needing to pay for this horrible meal a second time. The manager admitted that their actions were silly but didn't even bother to apologize for the horrible experience or offer any type of resolution.
Horrible food and experience for way too much money. This place is extremely overpriced. There are much better places you can eat for this price or for way less..
The restaurant responded to my review on Open Table with lies. They never mentioned a refund when they made the change, they never offered their rooftop restaurant as an alternate option for my deposit, I told them about my displeasure with the overall experience and food on site but the manager offered no solution or even attempted to apologize. He merely agreed with me that their actions were silly.

We arrived 10 minutes early for our reservation, but were not sat until 10 or more minutes after our booked time. I understand things happen, but it became apparent that they accidentally gave our table to the wrong party and ended up seating a group of 4 at a small & low cocktail table (meant for 2-3). We intended on having full course meals for four, so having a very small and low cocktail table made it very challenging to maneuver. The appetizers started out well and we generally enjoyed them- they were creative and had good flavors. When our entrees came we couldn’t fit the plates, glassware etc. on the table, but we did our best to make it work. Upon biting into the chicken dish, it was not fully cooked and had the texture of undercooked chicken- we actually had to spit it out due to this. We then cut into the rest to check how well it was cooked and it appeared pink and undercooked in some areas. It was not edible. We also got the Alaskan halibut which unfortunately was also undercooked throughout the middle. The halibut was only flaky on the sides and was pink and undercooked in the middle. Not white and flaky as halibut should be. Lastly, the ragu was overly salted & I’m someone who loves salt and probably can handle more than others. I still felt it was significantly overly salted to the point I only had two bites. When we let our server know, who was very nice by the way, she took the fish and chicken back to the kitchen. She then came back and said that the kitchen thought it “was cooked enough to eat.” Unfortunately, that is just not something an experienced fine dining server should ever say. She also ended up leaving her shift before the end of our meal so another person closed us out; I understand things happen but my guess would be poor management or serious operational concerns. They offered us complimentary dessert which we ordered instead of recooking the entrees which is fine, but when our bill came both the undercooked fish, chicken and desserts were on the bill. They removed them after we asked which I found to be uncomfortable that we even had to bring that up again. I know they are new and I imagine they will work out these important details, but for now I feel they have many things to improve before remaining open for meals. We also did not see managment at any point which was severely lacking. In a new restaurant I feel managment should be checking in with all tables and ensuring they’re meeting patron needs. Read moreThis is the main restaurant in the very new Populus Hotel. It has barely been open for two weeks, yet our experience at dinner was seamless and fantastic. Pasque refers to a native Colorado wildflower.
The space is gorgeous with various reclaimed and recycled materials, huge windows, and extremely comfortable seating with lots of large booths. The restaurant itself is not that large--you enter past a long bar with some bar seating. There's also a large, open kitchen.
The staff was terrific; very friendly, quite competent, and with a good knowledge of the menu and the wine list. Both are relatively short with the intention of rotating items as the seasons change.
The waiter recommended the savory beignets which were fried balls filled with spinach, artichoke, fontina cheese, and espelette pepper. They were coated with what seemed to be a honey balsamic glaze and sat in a pool of remoulade sauce.
I didn't think beignet was quite the right term as these were more like arancini (fried risotto balls); however, whatever you may call them, these were phenomenal. They were perfectly fried with soft interiors and an absolutely amazing combination of flavors.
My friend and I gobbled them up and were blown away. A really excellent dish. There are five golf ball-sized pieces per order and they are very rich, so I suggest sharing.
My friend then had the Stonington Maine lobster which had been carved up into bite-size pieces and was served with braised celery, celeriac, apple, and smoked veloute (white sauce). The portion looked a bit small to me (although the price was very reasonable for lobster), but he said the amount was perfect and that the lobster and other ingredients were very fresh.
I had the tagliatelle which came with a Colorado lamb ragu. The pasta was perfectly cooked and the ragu was very flavorful with many tender chunks of lamb.
I also had a glass of the Presqu'ile Santa Barbara County pinot noir. I am not familiar with this winery, but I do like California Central Coast pinots and this one was excellent and very reasonably priced.
All-in-all we had a terrific experience. Hard to believe the kitchen and staff had their act so well together after such a short run. Note the hotel is on a triangular lot surrounded by busy streets, but there is an excellent valet station with a parking lane on the 14th Street side of the building.
