
Chapter One New Beginnings My date and I met up and began our walk to The Corner Beet. The walk was a tad chilly, but in the sun it was nice. Truth be told, it didn’t matter what the weather was. Our hearts were warm.
As we walked we had to slow our pace because directly in front of us someone was walking slowly. It was okay though. Perhaps they were going as fast as they could. Maybe we needed to slow down. Maybe everything was fine exactly the way it was. Chapter Two Arrival We got to The Corner Beet. The sun illuminated the scene inside. But the sun would never know of the atmosphere inside. That was for us to know. So, we went in.
The atmosphere was that of chill music. The sounds of bells being rung to indicate another meal completed. Ready to be delivered to its table.
The menus were simple, yet filled with options destined to send the mouth on a spiritual journey. The only difficult thing about the menu was that everything looked incredible. Like nothing you could get anywhere else.
Did this place actually exist? We’ll never know. But, to us, it did. And always will I suppose. The Chapter Three The Decision We approached the counter, unsure but ready. Fully knowing the perfect moment doesn’t exist. You make those moments yourself. They are not given to you.
MiaKate took our order and greeted us like we had been long time friends. They were wearing a shirt they had thrifted 10 years ago, but to us it was brand new. Not only did the establishment have style, the people working there making it lively and welcoming did too.
MiaKate walked us through our options and let us know all of the daily items we could try. They were extremely kind and created a great experience for us.
The wait time to receive our order was next to non-existent. When it arrived I wasn’t sure if I was looking at a beautiful oil painting created by an artist who’s only way of expressing themselves was through art itself. Chapter Four Satisfaction I used my right hand to pick up the breakfast burrito. It locked eyes with me. It was ready, and I was too. Once I bit into it I knew it wasn’t a painting. But it was a work of art. Every bite was an explosion of flavor. Like fireworks in the dark or night. Chapter Five Ascension As I sit here spending time with their delicious doughnuts, and date, I could not be more thankful for this place for existing and for the people within it making all of this magic happen.
I’m not sure which was more magical. The person I was with, or the place. I do know. But both are magical.

Read moreThe Corner Beet is my go-to vegan brunch cafe in Denver! The atmosphere and decor are both creative and relaxing. The staff has always been extremely engaging and kind; once someone gave me a drink they made a mistake on. I’ve had so many lovely conversations with the servers — they have hired some truly wonderful people here.
The space is so warm and has amazing lighting. I love the botanical themes in the murals and throughout the restaurant in general, including all the plants. The plants are… so gorgeous. Truly.
(Whoever takes care of them, could you write instructions for me ??? You seem like a really good plant parent. Please help.)
The menu is somehow simultaneously diverse and concise and everything I have tried so far has been amazing. One of the best items is their breakfast burrito, which you can get loaded with everything on it. For the record, just get it loaded. Don’t question it. You probably want to. And you should.
Most of the menu is already vegan or can be made vegan. It’s a great place for vegans and non-vegans to share a table. Healing the war between devoted non-vegetarian eaters and vegetarians. Possibly treating deep family wounds and generational trauma.
There is a different selection of mostly vegan pastries and baked goods that someone prepares every morning. I don’t know who, but they are an angel. The pastries are extremely unique and beautiful. I have never had one I didn’t love.
If I were ever to have my own cafe, The Corner Beet would be what I would aspire to create. You can tell how much careful attention was put into creating this restaurant. It’s a truly special place and is such a wonderful addition to the Cap Hill neighborhood. Our community is better with The Corner Beet in it.
