Their Cacio e Pepe prepared in the cheese wheel with the special burrata and truffle slices on top is on the list of the best things I've ever eaten in my life. Top 10? Top 5? I don't even care, because it was divine.
It's prepared the Italian way, where they bring the pasta out in a pan, pour it into the cheese wheel, and then mix it around to melt and extract just the right amount of cheese. But then they bring out the burrata and squish it on top so it comes spilling out over the noodles, and shave REAL truffle slices (not that fake nonsense) on top.
This was better than any Cacio e Pepe I had in Italy (not that I've been everywhere in Italy, but certainly the places I went couldn't stand up to this).
Our server, Francesco, was a delightful fellow from Italy with just the best attitude and happiness to make you feel truly welcome.
Even their door guy was just that quintessential playful Italian guy playing with the passers by and courting their business.

Giuseppe made us feel at home, Carlo gave us a thorough understanding of the menu and wonderful table side service, and Salvatore tied it all together. I cannot recommend this restaurant enough. On the food side: definitely try the beef carpaccio. It melts in your mouth and the flavors are balanced to perfection. The Cacio E Pepe is a velvet richness that earns the presence of the fresh shaved truffles. For a more earthy, umami flavor, I would lean towards the Pappardelle Funghi E Tartufo. Not as rich as the Cacio E Pepe, but it offers a real punch that is not overwhelming. Finally for dessert, the Tiramisu is a delicate balance of richness and delicacy. It is not overpowering in any regard and ties quite nicely together. The Falanghina Fontanavecchia is a robust white that makes its presence known but quickly escapes leaving you wanting for more. I almost never drink, let alone enjoy, whites but this one is making me reconsider. You could tell the whole team not only is proud of their restaurant but wants you to have that same experience.
