You walk in and it's brick and wood and calculated Nashville-chic, the kind of place that knows exactly what it's selling. Tuesday night, live music drifting down from upstairs, not too loud, not trying too hard. A guitarist doing his thing without the desperate Broadway hustle. This matters. The space breathes a little.
The food arrives and it's honest enough. Hot chicken that doesn't apologize, crispy where it needs to be, heat that builds but doesn't punish. Fried pickles that someone actually gave a damn about—not drowning in their own grease, which is rarer than you'd think. The salad holds up its end of the bargain. Everything on the plate suggests a kitchen that understands the difference between feeding people and just filling them up. It's not poetry, but it's not lying to you either. In a town where tourists get fleeced on every corner, that counts for something.
What strikes you is the service—friendly without the performance, efficient without the attitude. The server means it when they check in. You can tell the difference. The beer's cold and cheaper than it should be in this neighborhood, which tells you someone's still doing the math on locals versus tourists and hasn't entirely forgotten who built this city. The music keeps rolling, and people are eating and drinking and nobody's pretending this is anything other than what it is.
You leave thinking about thresholds, about the space between authentic and accessible, between what was and what's becoming. This isn't the Nashville that built the music, but it's not entirely hostile to that memory either. The service is what holds this one back from 5 stars. The Stillery has been beloved in this town for quite some time now and has seen a few changes herself. I was super excited to try the hanger steak which is still on their website menu at the time of this review. Unfortunately all those steak options are gone now. So tried several dishes including a baked cheese which reminds you of shakshuka but itialian. The mac and cheese was pretty dissapointing but what has made the stillery has always been those larger than life "hurt me daddy" burgers so we got the carnivore. It's a big boy but finished with relative ease. The burgers Unfortunately aren't nearly what they used to be. The Brussels were supper good I'd be back for those again. Pretzels and queso was tasty. The also had Don julio reposado which is a mark of a bar you can trust. Tge vibe is very old-timey mom and pop, a bit saloon esque and a great fit alongside "honky-tonk" themed bars. All in all there are far worse places to eat in lower Broadway and as a travler you'd be hard pressed to find a better deal for your money. Had it not been for our experience with the verbally short and mentally inattentive waitress this could easily have been a 5 star experience. Add losing points for not having a non-bacon option for what was likely the best appetizer on the menu. Also, I did ask for no bacon but I will say parts of my burger tatsetd like they had it on there and just took it off but only time will tell and I will update this review. I would say at the very least if you have allergies, aversions or sensitivities likely avoid this place as they so not seem to take those...
