14/11/15 BOULANGERIE "LA PARISIENNE" : UNE RÉPUTATION SURFAITE ? Adresse : 52 Boulevard Saint-Germain. 75005 Paris. Métro Maubert-Mutualité.

Tout avait si bien commencé. Le site guideugout.fr excitait déjà nos papilles : "De tradition, authentique et pleine de caractère, voilà comment on pourrait la décrire la Parisienne." Soit. Jugeons sur pièce sur un échantillon de produits phares : Baguette tradition (meilleure de Paris en 2012) Pain d'automne pistache noisette (et raisin) Feuilleté sel de Guérande Pain au maïs brioché Pain tradition abondance de mie Epeautre bio Seigle feuilleté

La marque de fabrique du maître-boulanger ressort invariablement sur les cinq des six produits phares. Une pâte plutôt lourde et trop humide, moyennement goûteuse, parfois désagréable sous le palais, hormis quelques voluptés. Expliquons.

Le pain d'automne combine texture assez compacte, insuffisamment aérée, avec un fruit humide, le raisin. Son effet : une mie passablement gluante dans la prise en main, puis en bouche. L'amateur des tranches épaisses y trouvera moins son compte que celui des tranches plus fines. En effet, un temps de séchage de 15 à 30 minutes sur radiateur (selon température), accompagné d'une indispensable redescende en température ambiante, évaporera l'excès d'humidité sur les coupes plus fines. Mais doit-on faire sécher son pain comme son linge ? Le lecteur appréciera. Le fléau de la balance penche donc défavorablement malgré la répartition équilibrée et élégante du raisin, des noisettes et des pistaches. Celles-ci sont en effet introduites juste à point dans le processus de fabrication, conservant ainsi leur consistance généreuse, apportant un craquant assorti d'une richesse aromatique au secours de la mie pâteuse et gluante.

Quant au feuilleté au sel de Guérande, l'opprobe le dispute à la désapprobation. Nul besoin d'être expert pour contester le label de "feuilleté", dont le produit ne porte que le nom. Rappelons qu'un feuilleté s'effeuille avec amour, plisse les épaisseurs de sa robe couche après couche, en couvant des poches d'air comme pour mieux faire crisser les épaisseurs de robes qu'on froisse entre ses mains. Raté. Sans appel.

Le pain au maïs, pour sa part, corseté dans un petit baquet à la façon "dans les temps", offre ses éclats de maïs avec générosité. Mais l'âme du pain au maïs à toujours été sa pâte plus difficile à ouvrager (on lui ajoute du blé), et sa saveur prononcée. Or La Parisienne semble davantage tirer vers le blé que le maïs authentique. Un test en aveugle effectué avec un tiers de confiance entre ce produit et un pain au maïs d'une simple boulangerie de quartier a conclu à un verdict sans appel : le plébiscite de la simple boulangerie de quartier.

Finissons par le seigle feuilleté. Rendons à César ce qui est à César. La note de 3,5 sur 5 se vaut. Le feuilleté mérite pleinement son nom, au sens feuilleté développé précédemment. Chapeau l'artiste pour une céréale - le seigle - particulièrement rude, rustique, rebelle à la légèreté. On pourra cependant lui reprocher une texture un peu trop grasse qui recouvre les doigts, ou transpire du sac papier d'emballage. Difficile exercice entre lipides et croustillante ! Coupé en tranches, beurré d'un sel de Guérande (comme si la matière grasse ne suffisait pas !), ce petit pain grassouillet fera néanmoins le régal des petits déjeuners. Mais attention aux digestions un peu difficiles.

En somme, la boulangerie La Parisienne déçoit plus qu'elle ne séduit : goût variable, pâte lourde. L'originalité du seigle feuilleté et son cortège de voluptés mérite seule le détour, peut-être même un jour le deplacement lorsque la maître-artisan aura reequilibré sa pâte au profit du plus de croustillant et...

We stayed near this patisserie in 2019. We searched for award winning croissants and this is what came up. We weren’t disappointed! Wanted to eat everything in the window! We shared a croissant to start and the giant green macaron with raspberries. Had to go back for more croissants. The lovely lady manager was so patient with us, even though we can’t speak French. We stayed in Paris for over a week and went there almost every day! I’m going back to Paris next year (2024) and this will be high on my list of...

Such a disappointment. Wasps all over the bread, pastries and sandwiches, flying everywhere. Vegetarian sandwich had no grilled aubergines in it and felt like it was from the day before. No one to clean the tables after customers left, had to clean my own table with my napkin, not so coronavirus-compliant... Felt like I was asking for a favour when I had to ask for one more napkin. Plus, they still use a lot of non-compostable non-recyclable single-use forks and knives, which is now illegal in France since...

An amazing bakery with tasteful options for breakfast. There are plenty of things to choose from sandwiches, croissants, salads, sweets, breads and more. There is one Vegan option, the olive bread that was AMAZING. They offer coffee but not from an espresso machine. The stuff was really friendly and was trying to help me find something to eat and I thank them for that. They prices are really fine and the location is great. We ordered out food and head to the island to eat out breakfast on a park near the Notre Dame.

Came here 2 days in a row to grab baguettes for breakfast while on a trip here. Bread was all very fresh and warm and great for sandwiches. Summer Salad was nice too! It had strawberries and avocado and some cheese on top which was a good combination. Had quite a lot of spinach in there which got a bit too much but we ended up keeping the extras and using them in sandwiches. Salmon Sandwich and Ham & Cheese Sandwich were both good! Took these to go on a trip and they were a good meal on the go.

The OJ is good but as you would expect overpriced. It’s €5/litre from the grocery store across the street. The coffee and lattes are average, and definitely don’t order the hot chocolate as it’s basically colored water.

We were staying near by and came here almost every day for bread/croissant, because the very very popular one across the street always has a long time, and we tried it once and didn’t find it to be thaaaaat much better. The OJ is good but as you would expect overpriced. It’s €5/litre from the grocery store across the street. The coffee and lattes are average, and definitely don’t order the hot chocolate as it’s basically colored water.
