The food pairing and taste combinations are very interesting as expected by the concept of a dutch food with asian and french techniques or flavours: this is local (from Netherlands) incredibly tasty and complexe and good looking..
The wine pairing is international and focused on the completive association of taste.

The place now.. you may visit several museums to have some parts of the life-in-16th-and17th-century puzzle or you may eat to the restaurant. There is actually 9 rooms on the floor of 5 typical buildings of the golden-age period.
Visiting the place is travelling through time. It is wonderful to discover.
I am not a person who writes a lot on my opinion to a place. But today morning something happenned.
I had plan to show the place to friends met in Amsterdam and advice them to try the experience. They look at the menu and planned to come back the evening.
Because they are a lot of entrance we crossed one of the access gate and take a look inside.
A man from the restaurant instinctly come outside to talk with us. We learned the restaurant was closed due to Covid19 restrictions and only open for breakfast according an agreement with an hotel nearby but invites us to enter and visit.
He takes the time to show and explains different parts of the restaurant history of the place and some of the art pieces covering the walls.
We also met the chief, he came to us to talk about the restaurant as well telling the way that the restriction may affect the price or the quality of the experience and that he does not want to.
We learned that it will re-open in september normally. And i cannot wait to be there. I do appreciate so much the kindness honnesty and simplicity of them.

So, I’ll start with the good thing. The food, the waiter and service, the wines, the atmosphere, amazing. The manager… rude. To begin with, this place is clearly full of mind blowing things you would want to take pictures of, like interior, details and so on. And my friend who’s been there over a dozen times said, she’s always there and always takes photos and everyone is super nice about it. So, had we. Anyway, I got up with my friends to walk up to the empty table by the fire place to take a picture, and my friends made a turn to the bathroom I stayed, and manager walked by and said, rudely, “don’t take photos of people” I said, “but there are no people here?” He continued by saying, yes but this isn’t your first photo don’t take photo of people. I said, there are no people here and you can look through my photos I haven’t take any of people to which he replied. You should just say Yes and stop arguing.
I thought all of it was totally uncalled for. First, you come off at me rudely, giving me a completely unwarranted remark, with complete show of attitude, secondly, expecting me to submit to you and respond how you want to? Had it he came to me by saying, “excuse me,” and as me politely I would’ve apologized but he has ambushed me with attitude and had and an expectation that I will not talk back when I am being ordered, not given a notice. I understand that there are certain expectations and I am cautious of avoiding photos of people in the photos because it is inappropriate but there are, I am not saying “nice” way to say these things to customers I am saying “more polite” ways. Read moreThis was a wonderful dining experience from start to finish. The maître d' greeted me at the door and knew my name before I even had to tell him. I was seated at this perfect little table right by the window. Simona, my server, took me on a very detailed tour of the menu, highlighting many options for the evening's dinner service, either chef's choice or a la carte, which I love. Options, y'all. I love options.
The pumpkin soup with mushroom foam was FANTASTIC. It was thinner than expected, which made it all the more fitting a vehicle for all the delicate flavors that mingled in my dish. I used the soft center of the crusty boule to collect any and all of the last drops of it to make sure I didn't waste ANY of it.
The sea bass was light and tender, the sauce that accompanied both savory and intricately varied in texture. Grains, sauces, oils, and protein all combined to make a very entertaining main course.
I took another staff member's recommendation to enjoy the lemon curd for dessert with an espresso. When this beauty arrived at the table, I was blown away by the light and tangy curd, the tart in the raspberry ice cream? Just wow.
I love a good coffee at the end of the meal. Y'know what else I love? A surprise dram of a unique liqueur I've never tasted. A very tall and stately gentleman delivered a shot of the house jenever, infused with what I THINK he called "Herbs of the Gods."
