I saw this restaurant on Instagram a few weeks ago and have been wanting to go. I was leaving a friends place fairly late, I had called ahead to be sure the kitchen was still open. The waitress gave me a heads up and mentioned that I had 30 mins until the kitchen was closed for the evening. I made it in 15 mins. She was so sweet and asked if I knew what I wanted. Once I said I had an idea of what I was looking to order, she asked if I had ever been before. This being my first time going, she told me that everything on the menu was good and suggested her favorite dishes that are on constant repeat for her. I sadly did not get her name but her suggestions definitely were delicious.

I ordered the Margherita Pizza with half sausage and a Bolognese. The crust on the pizza was perfectly cooked. A soft crunch, if that makes sense, the ingredients tasted so fresh. The pizza sauce was a perfect balance of sweetness and tangy. The cheese pull was definitely there.

The Bolognese definitely was out of this world. The pasta was perfectly al dente. The meat sauce was mind blowing! Every bite kept getting better and better.

A welcome gem in the DTLA Fashion District!

I stopped by Republica Pizzeria and was seriously impressed. I started with the calamari fritti, and wow--it was really good. Perfectly golden brown and crispy on the outside, with that ideal tender chew inside. The spicy, well-seasoned marinara sauce that came with it took things to another level. So flavorful.

I also tried the passionfruit margarita, which was refreshing and had just the right balance of sweet and tart. A solid drink to pair with the meal.

The ambiance here is a total vibe--R&B classics playing softly in the background, warm ambient lighting, and a stylish yet relaxed atmosphere. It's the kind of place that works just as well for a casual date as it does for a chill night out with friends.
